Can you just substitute soy milk and Ener G egg substitute?

Soak ? cup tapioca pearls in 2 cups filtered water overnight (I did 12 hours for best results). The next day drain the pearls.

Mix together in a double boiler:

2 ? cups vanilla-flavored soymilk
1/3 cup brown rice syrup
The drained pearls
2 ? tablespoons agar agar flakes
Raisins (I used a handful, maybe ? cup)

Now since I don’t have a double boiler I tried a couple of things. What worked was adding the stirred mixture to my rice cooker pan and putting it in my crockpot over water, sealing it with the crockpot lid and turning it on high. The water covered the bottom of the pan so it floated a little. I left it on for about an hour, took it off and let it cool. It thickened as it cooled. I refrigerated it and when I ate some later, I sprinkled some nutmeg on it.

CHIP TAPIOCA PUDDING

1/3 cup (80 ml) organic cane sugar crystals
1/4 cup (60 ml) corn starch
3 tablespoons tapioca beads
1/8 teaspoon salt
2 3/4 cups (660 ml) soy milk
1 teaspoon vanilla
1/4 cup (60 ml) frozen blueberries
1/4 cup (60 ml) non-dairy chocolate chips

1. In medium saucepan combine sugar, corn starch, tapioca, and salt. Gradually stir in milk until smooth.
2. Stirring constantly, bring to boil over medium heat and boil 1 minute. Remove from heat. Stir in vanilla and blueberries.
3. Pour into serving bowls. Cover; refrigerate.
4. Add chocolate chips before serving.

I use rice or almond milk, and flax seed as the egg substitute. Just grind a tablespoon of flax in a coffee grinder, mix with 5 tablespoons of warm water, and leave to gel for about 5 minutes. It will be the exact consistancy and quantity as one egg. I use flax for everything. I like it better than the ener g because it has too many ingredients, that are not necessary. Good luck! I made some last week-great with fresh ground nutmeg on it!

yes just use substitutes and you should be fine.

Using eggs in tapioca is not a must. When it comes to making it vegan, a good option if you like coconut is to make it with coconut milk. Soya milk works well too but go with the vanilla to make it more tasty.

Coconut Tapioca
3 cups unsweetened coconut milk, plus more for serving
3/4 cup water
3 tablespoons regular tapioca, rinsed
1/2 cup sugar (or more to taste)
1/2 teaspoon salt

Put the 3 cups coconut milk and the water in a large saucepan and bring to a boil. Stir in the tapioca and bring to a boil, then reduce the heat to low and simmer, stirring, until the tapioca Becomes transulent and soft, 10 to 15 minutes for tiny pearls, longer for larger tapioca pearls. Gently stirring, add the sugar and salt to the tapioca and cook for 10 minutes more. Remove from the heat. Serve with extra coconut milk on the side.

Just use regular milk and eggs. why change something that already works.

try it out..sometimes substitutes work as well if not better than the original.
