Here's one of our favorites that our non-vegetarian guests always like, too!

MEXICALI SQUARES

Topping:
1 tablespoon olive oil
1 clove garlic, finely chopped
1 cup chopped onions
1 cup chopped green pepper
1 can (16 oz) kidney beans, rinsed and drained
1 can (8 oz) tomato sauce
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder
2 teaspoons sugar

Crust:
? cup flour
? cup plus 2 tablespoons cornmeal
1 teaspoon baking powder
1 egg white
? cup plus 1 tablespoon skim milk
2 tablespoons olive oil
1-1/2 cup cooked corn (cook in microwave if frozen)
3 tablespoons sugar


Preheat oven to 350F. Spray 8 or 9” square baking pan with cooking spray. Cook frozen corn in microwave.

To prepare topping: Heat oil in a large nonstick skillet over medium heat. Add garlic, onions, and green pepper. Cook 10 minutes, or until onions are tender and start to brown. Remove from heat and stir in remaining topping ingredients. Set aside.

To prepare crust: In a small bowl combine cornmeal, flour, sugar, and baking powder, mixing well. In another bowl combine egg whites, milk, and oil. Beat with a fork or wire whisk until blended. Stir into cornmeal, mixing just until all ingredients are moistened. Stir in corn. Spread crust mixture evenly in prepared pan (Mixture will be loose.) Spoon topping evenly over crust. (Do not stir.) Bake uncovered 35-40 minutes. Let stand 5 minutes, then cut into squares to serve. Makes about 4 main dish servings.

A cheeseburger with extra tomato and onion.

1 cup of wholegrain pasta - bring to the boil.
Add half a can of crushed tomatoes with basil and oregano, a clove of garlic, and chilli (how much chilli depends on how hot you like it). 1-2 tablespoons of black olives and half a zuchini. Cook for about 10mins all together and make sure you mix all of it properly.

Then serve it up and eat!

Vegetarian tacos. I use Soy crumbles that are similar to ground beef. Then i use taco seasoning and make tacos as regular.

Any dish with mushrooms! Any kind of mushrooms, no preference.
