Anyone have a recipe they really love using TVP or Cous Cous?

I went grocery shopping last week and picked up some cous cous and TVP (textured vegetable protien) planning to get creative and make up a couple new dishes with them. Well, they're still sitting in the pantry. I'd love some suggestions for recipes using either ingredient (especially ones that might even tempt my non-veg family, too) I've looked some up on vegweb, vegsource and fatfreevegan, that sound like they would be good but I'd really prefer ones you've tried yourself.

Cous Cous Tacos



1 1/2 cups cous cous
1 1/2 cups vegetable stock
1/4 teaspoon each: cumin, corriander, tumeric, black pepper, & oregano
3 diced tomatoes
3 cloves garlic minced
1/4 diced red onion
1 grated carrot
1/2 cup each frozen corn and peas, thawed
1/2 avocado diced
1/2 cup each canned chick peas & blackbeans rinsed & drained(optional)
1/2 cup grated cheddar cheese or mexican type cheese or soy cheese.
Taco shells
Directions:

Boil the vegetable stock, add the cous cous turn removed from heat and set aside. In a large bowl combine all the other ingredients and stir. After the cous cous has set aside for 10 minutes, fluff with a fork, and add it to the rest of the ingredients . Stir well and serve warm in taco shells.


You can also use the TVP as you would ground beef and use it for the taco filling instead of the cous cous.

Served the cous cous ones for a football party-the men didn't know they were cous cous and good for them.

Not into TVP but here is a great breakfast recipe for Cous Cous intoduced to my by an Algerian.

Cous Cous
Fresh Cinnamon
raisins
Maple Syrup (or honey or sugar)
milk (I use soy) or yogurt or both
almonds

Serve cold and you can improvise to suit your taste. I find its a great breakfast alternative to oatmeal or granola.

Couscous With Spinach and Pine Nuts

1 cup dry couscous
1 1/2 cups boiling water
1/2 teaspoon salt
1/4 cup olive oil
3-6 garlic cloves, minced
1 large onion, diced
1 (28 ounce) can diced tomatoes
1/2 cup minced fresh basil
1/3 cup pine nuts
5 cups loosely packed fresh spinach
1 cup grated muenster cheese (try reduced fat)
1/2-1 teaspoon cracked black pepper

Add couscous and salt to boiling water. Cover and let sit 5 minutes, then fluff with fork.
Preheat oven to 375.
Heat oil in large skillet. Saute garlic and onion for ten minutes, or until tender.
Drain canned tomatoes, reserving 1/3 cup juice. Add drained tomatoes to garlic and onions. Cook 10 more minutes, stirring frequently.
Stir tomato mixture into couscous. Mix in reserve tomato juice, basil, pine nuts, raw spinach and pepper.
Spread half of the couscous mixture in a shallow baking dish. Sprinkle muenster evenly, then top with remaining couscous mixture.
Cover dish with foil and bake at 375 for 25 minutes.


This is really, really yummy.

Here's one of our quick and easy week-night favorites:

WARM TACO DINNER SALAD (microwave recipe)

1 onion, chopped
A little margarine (about 1 tsp)
16 oz can crushed tomatoes, undrained
Approx. 1-1/4 tsp. chili powder
1 tsp. cumin
Couple dashes of black pepper
A little sugar (~2 tsp?)
Approx. 2 tbsp. catsup
2/3 cup dry TVP (textured vegetable protein)
16 oz can kidney beans (or black beans, etc.), rinsed and drained
Fresh baby spinach (or roughly torn/sliced/ or chopped lettuce)
Non-fat sour cream
Corn tortilla chips
Guacamole (optional)
Optional: fresh cherry tomatoes (halved), shredded cheese, chopped red bell pepper, etc. (optional)

Microwave onion and margarine in covered medium bowl several minutes (until tender). Add tomatoes, chili powder, cumin, black pepper, sugar, and catsup. Then add TVP. Cover and microwave several minutes, until TVP is tender. Add beans and microwave another minute or two. Divide spinach into two large dinner bowls. Top with TVP mixture, then guacamole (optional), and some non-fat sour cream. Sprinkle with cherry tomato halves, etc. (optional). Place corn chips (sticking up) around inside edge of bowl. Serve immediately. Delicious!

To make quick & easy guacamole: Using a fork mash 1 avocado (minus the pit and outer covering) in a small bowl. Add 1 tsp lemon juice and 1-1/2 to 2 tbsp mild Pace picante sauce. Yum!

CousCous tastes a lot like rice. I added cinnamon to mine and it was delish! Steamed broccoli would be great too.
