One simple way I like to make spinach is: finely dice 1/2 medium onion, 2 garlic cloves, minced, saute these until clear in a saute pan, then add 1/2 c. water and half of a vegetarian boullion cube. Simmer these on medium heat until cube is dissolved, about 1 minute or so, stirring these around. Turn up the heat to high, then add 1lb spinach leaves that have been wash thoroughly, toss these vigorously until they are coated with the onion and cloves mixture, and the leaves just begin to wilt (this takes a very short time, 30 seconds or so).
Remove pan from the heat, and let the spinach finish cooking in the juices. Season to taste with salt and white pepper, adding a pinch of sugar if the leaves were larger and a bit bitter. I think its a very tasty recipe, and I also sometimes use green or red leaf lettuce in place of the spinach.
3/4 bag of spinach
1 can mandarin oranges drained OR
1 pint of strawberry or raspberry
3/4 cup of toasted almond
dressing
1/4 salad oil
1/4 sugar
1/4 cup vinegar.
Mix the salad.

Try making spinach fritata. Just chop up your fresh spinach (according to your preference), add in diced tomatoes, cucumber, celery, carrots, mushrooms.
First, beat up 4 eggs with 1/2 cup of skim milk (skip the milk if you're not a lacto-vegetarian). You may add salt and black pepper to taste, or leave it as it is, since you've got some nice, sweet vegies in the fritata. Pour half the mixture into a deep frying pan that's has 1/2 tsp of olive or canola oil added in. Wait a min for the bottom to cook before adding in the chopped vegies. Then pour the remaining egg on top and cover the pan for another min on low heat/ flame... or till the top part of the egg cooks.
You can do the same in a small baking tin in an oven.
This should be able to serve at least 2 people, making a good balanced meal with a side green leafy salad with homemade dressing of lemon juice and herbs with no oil :)
