Here’s a super-simple, super delicious way of preparing a chickweed side dish in a hurry. Serve over whole-grain noodles.

8 cups chickweed leaves and stems, rinsed.
2 tsp. olive oil, or to taste
1 tsp. lemon juice
1?4 tsp. salt, or to taste"
1?4 tsp. black pepper, or to taste

1. Shake off the excess water and chop the chickweed.

2. Place in a heavy pot, cover, and cook over low heat 5-10 minutes or until just wilted. Avoid overcooking. Don't add any liquid. The water clinging to the plant is sufficient.

3. Stir in the remaining ingredients. Serve hot.

This is how our family prepares it.
Boil hot water and then dunk the chickweeds in the boiling water for about 1 minute-2 minutes until they wilt and get cooked but still are green. Rinse with cold water to stop the the cooking process so they won't turn yellow. After you squeeze them really well and chop them into the size you want and add:

1 T of soy sauce
1 T. Sesame oil
1/2 t. garlic powder
1 T. Onion powder
2 T. yeast flakes
1 T. Lemon juice
Salt if needed.
And plenty of toasted ground sesame seeds

Toss the chickweed together with the above ingredients and enjoy the dish.
