I need some lunch ideas?
Ok im gonna be going on a trip saturday and sunday with my 4-h group. They are all having sandwiches with lunch meat, but im a vegetarian. What are some lunches I can bring that will last the whole weekend without being in a cooler

Nuts
Fruit (oranges, apples, banana's that come in their own protective jackets and don't require chilling).
Pita bread
Crackers
Trail mix
Fruit leather
Sesame sticks
Vege jerky
Nut butters (not much because of racidity)
Vegi sticks (celery, carrots)
Granola
Dried fruit

Well, sandwiches that contain lunchmeat should be refrigerated somewhat to keep them cool. I wouldnt want to eat unrefrigerated lunchmeat.... But for your ideas, you can have a vege wrap with cucumber, avocado, carrot, sprouts, lettuce, tomato and you can wrap in tortilla or just spring roll wraps.
cheese. vege alternitive called quorn deli. tastes just like ham.
marmite. peanut butter. butter. its hard i know, im a veggie too!
EGGPLANTS PUREE :
Grill the whole eggplant on the barbecue until you can peel the skin easily.
In a pot, smash them with olive oil and some whole peeled tomatoes, salt, pepper.
You can also add crushed garlic.
Eat it warm or very cold
GRILLED VEGETABLES :
4 zucchini
2 eggplants
4 yellow zucchinis
olive oil
thyme, salt & pepper
In an aluminium foil, put all the vegetables that you would have sliced or diced,
the salt, pepper, thyme and olive oil,
close the foil but leave a little opening, cook on the barbecue.
You can eat it cold as an appetizer, or hot as a side dish. Very simple and very tasty.
In fact you can do the same proces with any vegetables.
Asparagus and Portobella or wild mushrooms are great like this too.
POTATO OMELET (tortilla) :
Slice potatoes, not too thin. In a pan fry put butter and sliced onions.
When golden, add the potatoes.
When golden, add the eggs. Fast, and easy
POTATO PANCAKES (the french way) :
Shred some potatoes, not too thin, not too thick.
Add to battered eggs (there must be more potatoes than eggs), with crushed garlic.
In pan, put butter and make the pancakes.
RATATOUILLE (for 6 people) :
4 zucchinis
4 bell peppers of different colors
3 eggplants
2 big onions (sliced)
5 crushed garlic cloves
thyme & bay leaves
1 cup of olive oil
2 big cans of whole peeled tomatoes
salt & pepper
Diced the vegetables (all of them), not too thick and not thin.
In a pot, put the butter, the sliced onion, crushed garlic.
When the onions are golden, add the peeled tomatoes (drained
the max you can of their juice), the
thyme and bay leaves, salt pepper (a little).
Let the liquid evaporate and then add first the bell peppers,
salt & pepper ( a little), then 10 minutes after,
the zucchini & eggplants, salt & pepper, a little.
You can serve this hot, or very cold as an appetizer
RICE SALAD :
choped black olives
diced bell pepper (small pieces)
diced tomatoes (small pieces)
diced cucumber (small pieces)
can of tuna
some caned corn (optional)
some laituce (optional)
Vinaigrette :
red wine vinegar
peanut or sunflower oil
Dijon mustard
salt & pepper
All mixed together

What do you normally eat? Pack that up in a small insulated lunch box with a bottle or two of frozen water. Your food will stay cold and you will have nice cold water to drink.
Hummus travels well, as do little baggies of fresh veggies. I would not suggest putting the hummus or any spread on any bread prior to leaving.....it gets soggy. Just pack what you like in little containers (individual yogurt containers are great, use what you need, then throw away, hopefully in a garbage can, not wherever).
Don't forget trail mix....make or buy whatever you like. Have Fun!

this is a super easy and everybody have it their own way recipe but very yummy and perfect for camping.
Before you start to make the omelettes you will need to set a pot of water on to boil which can be on your camp stove or over your campfire.
You need the quart size freezer ziplocs 1 for each person, then any omelette ingredients your campers prefer. list of possibilities-ham cubes, bacon bits,diced cooked chicken, onions, green peppers, broccoli, shredded cheeses,or anything that works for you. just set out the carton of eggs 2 per omelette and have each camper crack their eggs into the ziploc. You can also bring a small container of half and half and put some into each bag but it works well with just eggs too. then everyone chooses from the extras what they would like in their omelette, drops it in their ziploc, then zips it up and puts it into the pot of boing water. It takes approx. 3 minutes, but you can check the doneness with tongs just lift the bag and look. It actually will roll itself up into an omelette shape in side the bag. When done just unzip roll onto your plate or into a soft tortilla, salt and pepper to taste and enjoy!!

Lay out a tortilla on a flat surface and spread the beans on 1/2 of the tortilla (only fill 1/2 of the tortilla) and thinly layer the ingredients that you like. Then fold over the top (so it's shaped like a semicircle) and put on your grill grate. We usually use a tri-pod about a foot or so away from the fire. Just keep watching them and turn when the bottom get brown. This is a super easy meal to make and is always a huge hit. We can't seem to go camping and not eat them. ;-)
Well I would pack pasta of bean chili in a thermos maybe. Or pack pasta salad, bean salad, slaw etc.. (without mayo that will smell,) Or you can get fake meat, but if you cant access that, I also like antipasti, which is vinaigrette veggies. At very least, pack a peanut butter sandwich, a pretty salad, a homeade dessert (like a brownie), a fruit kabobs (covered in lemon juice so it wont spoil)
edit- oh actually, a burrito is a good idea, wrap up refried beans, lettuce, cheese, veggies, salsa and guacamole in a tortilla.
