Can you freeze fresh vegetables in their original state?
I have been on a healthy eating kick hoping to make it a lifestyle and in so doing have purchased a great many fresh veggies that I am afraid will go bad before I eat them. Can I slice and freeze the? Carrots, celery, tomatoes, cucumbers, radishes, broccoli? Thanks.

Yes, you can. We do that with all of our fresh veggies and fruits. So we have it for Winter. And doesn't go mushy or yucky, they taste the same.

soft watery things will thaw as mush...forget it unless you put them in soup. Hard veggies, carrots, brocoli, etc will freeze and thaw just fine. Just go to the frozen food case at the grocers and see what packaged frozen veggies you can buy. Those are the ones you can freeze at home.
You can't freeze vegetables such as cucumbers, raddishes and tomatoes, btu you can freeze carrots, broccoli, cauliflower, beans, corn, etc. They have to be blanched first though.
