Do you know a good recipe for soya mince albondigas?

It must be vegetarian. thank you.

NGREDIENTS:

* 12 oz. roll frozen ground beef substitute, thawed
* 1 egg
* 1/2 cup dry bread crumbs
* 1/4 cup milk
* 2 Tbsp. mustard
* 1 Tbsp. ketchup
* 1/2 tsp. dried thyme leaves
* 1/2 tsp. salt
* 1/8 tsp. pepper

PREPARATION:
Combine all ingredients in a large bowl and mix gently with your hands. (You may need to add more milk or bread crumbs to form a shapeable mixture, depending on the variety of beef substitute you use.) Form into 1" albondigas. Chill for 1-2 hours.

Preheat oven to 350 degrees F. Bake albondigas for 20-30 minutes until firm and hot. You can then freeze these albondigas and use in other recipes that call for frozen precooked albondigas. Makes about 30.

No idea about the albondigas but i'm assuming you have to reconstitute the soya mince first. if that's the case use vegetable stock instead of water for a much tastier product.

the top recipe is good but I put in rice, onion and a lot of fresh cilantro and omit the ketchup and mustard.
