What's a Vegetarian substitute for chicken or beef broth?

Is it available in those little cubes as well?


Answers:
Knorr is one of the brands of vegetable cubes, while Swanson's has it in cans. You can also get it in those cardboard boxes or pouches.

You can make your own too by boiling water with all kinds of vegetables in it (lettuce, tomato, carrot, onion, celery, salt/pepper, etc...). That will also allow you to make soup.

Vegetable broth you can buy it in cubes but the best in in the paper cartons in the soup section.

I've never seen it in the cubes, you'd probably have to make it yourself unless you look in a specialty store.

I don't know if it is in the little cubes but it is easy to make if you have some ingredients.
2 cups Carrots cut into chunks
1 onion cut into big chunks
A bunch of celery cut into chunks
1 tbsp whole peppercorns
Some sprigs of a fresh herb of your choice
5 cups of water
1 cup of white wine
Bring to a boil, then simmer for 45 minutes.
It's better then any store bought broth in my opinion.

Ive been in your shoes before. What I did (my girlfriends parents are vegetarian) was i took some carrots and celery and boiled it and then added alot more vegetables. I have seen people put in potatoes, but the potatoes are very absorbant of flavor, so you could make any vegetarian soup and throw in some "taters" and there you have a new side dish to go along with your meal!

Swansons has a really good vegetable broth, but I don't know if it is vegan.

isn't that stuff artificially flavored and mixed with water? what more do you want? shouldn't that be good enough for the plant killing fruit/veggie eaters.

There are "bases" which you might find in your local grocery store that are beef, chicken, ham, pork, lobster, clam, and vegetable. Truly for the best broth, your best bet is to make it yourself. If you are looking for cubes, yes someone makes cubes too.

Mushroom stock. But if you want cubes just get veg bullion and reduce a little.

I always use nutritional yeast.

Just add a bit into a pot of soup with some good quality salt (like the Utah rock salt, or Celtic sea salt) and mmm... This is for the chicken kind of flavour, not beef. Beef broth never appealed to me; chicken tastes a lot better.

try making it, use water, salt, onions, garlic, pepper corns, and apple. Maybe a bay leaf and some carrot peelings. Make a pot then freeze what you dont use this time and save for later.

I use homemade veggie broth. You can buy canned, boxed, or cubed veggie broth as well, but homemade is so easy and fresh. Just chuck veggie scraps and peelings in a pot with fresh water, season with herbs, salt and pepper, and simmer for an hours. Yummy. I always keep it on hand for cooking rice and grains.

Vegetable stock would be the best but vegetable broth is fine as well. Imagine foods makes a broth called No Chicken Broth too.

You can sub veggie broth for either chicken or beef. Also, I can't recall the brand but there is such thing as "no-chicken broth", which is the veggie version of chicken broth. You can also get veggie bouillion cubes.
