I need a good vegetarian recipe for this easter!?
I am the only vegetarian in my family and everyone at my aunt's easter dinner is totally in love with meat. What can i bring (that is vegetarian) that i can eat??I just want to know if you have any good recipes!!!
I need to have something to eat!!!!!!!!!!!!!!!!!!!!!!!!!!!...
PS: i don't eat any type of meat (including fish)

The lasagna thing is a good idea but i already tried that and througout the ENTIRE DINNER (which was like an 1-2 hours long) my Uncle and brother would not stop complaining about it not having meat in it.
but thats a good idea anyways!

Its a side dish, but this is the *only* vegetarian recipe that my family actually fights over (and I'm the only vegetarian too).
GREEN GRAPE SALAD
INGREDIENTS
* 4 pounds seedless green grapes
* 1 (8 ounce) package cream cheese
* 1 (8 ounce) container sour cream
* 1/2 cup white sugar
* 1 teaspoon vanilla extract
* 4 ounces chopped pecans
* 2 tablespoons brown sugar
DIRECTIONS
1. Wash and dry grapes. In a large bowl, mix together the cream cheese, sour cream, sugar and vanilla. Add grapes and mix until evenly incorporated. Sprinkle with brown sugar and pecans, mix again and refrigerate until serving.

Hey try using foodnetwork.com. They have some decent recipes. And it depends if you like mushrooms, eggplant, beans or anything else. Try some dish with roasted squash, my fav is butternut roasted with garlic and pureed then served with some pan fried tofu. Marinate the tofu in teriyaki sauce for a nice texture.
try polenta! it is quick and easy to make (15 minutes to cook and maybe another 15 to personalize), everyone else will totally love it so you can share it around, AND you can dress it up as much as you want with veggies, cheese, whatever works in your vegetarian diet.
3 1/2 c. water
1 1/4 c. course yellow cornmeal
3/4 tsp. sea salt
1 1/4 c. provolone or fontina cheese, packed
(suggested additions: sliced tomatoes, ricotta cheese, garlic, basil, black olives, artichoke hearts)
Bring 2 1/2 c. water to boil in a medium saucepan. Meanwhile combine the remaining water and the salt with the cornmeal in a separate bowl. Add this wet cornmeal to the boiling water, whisking briskly (no lumps!) Cook over medium heat, stirring constantly for about 5 minutes, until thick and smooth. Stir in the cheese. You can serve polenta just like this or to make it look nice, stir in the additional ingredients you like and place it in a buttered casserole. Before serving, top it off with more cheese and broil it nicely. This great dish can be made ahead and kept refrigerated. Microwave it to heat through, sprinkle top with tomato slices and cheese, pop it into the broiler to lightly brown the top. Have a happy Easter with your family!
Make something that they will all like, despite the fact that there is not meat in it! That way they might see that vegetarian food can be really yummy!
Vegetarian lasagne or something similar could be a good choice.
Make a bechamel (white) sauce - the easy way to make it is to
*heat 1 litre milk until almost boiling.
*add 2 Tb butter
*scoop out a little hot milk (a couple of Tb worth) and mix this milk with flour until it forms a paste consistancy.
*add the flour paste to the rest of the milk and butter.
*stir until thickens
*add a few TB of parmesan cheese, pinch of salt and pinch of ground nutmeg... and you're done!
Make a big pan of veggies - use whatever you have, but suggestions would be:
*onion
*garlic
*mushrooms
*spinach
*zuchinni
*celery
*carrot
*capsicum/peppers
- cut veggies and cook in a pan until soft. add some spaghetti sauce or pesto or (canned tomatoes and herbs and salt)
Layer the 2 sauces in a baking dish between sheets of lasagne pasta. Bake until nice and brown. Enjoy!
