I love spicy fajita salads. Saute a red onion and two bell peppers in garlic infused olive oil. Add salt and pepper to taste. Add 1/2 c of salsa. Add the onion and bell pepper to a bowl of chopped green lettuce. Add chopped tomato and avocado if desired and toss.
If you aren't vegan, you can add some cheddar and jack cheese or sour cream.
This is my absolute favorite salad!
If you go to the foodnetwork web site, type in "wheatberry salad" select the one made by Ina Garten. It's unusual, delicious and very pretty to look at. You can substitute various vegetables, I added diced english cucumber, along with red pepper, green onions and celery. Have you ever tried tabouli? That's another good one. This one is also on food network. The great thing about both of these is you can make them well ahead of time and they just keep tasting better as they sit.
My daughter's roommate invented this salad and we love it. We call it Brooke's salad:)
Spinach, romaine lettuce, or mesclun mix
