well, this is 8 hours after you asked your question so I hope you found something to eat. for the future just chop up a bunch of veggies, sautee them with some yummy spices or garlic, and toss them with pasta, voila, easy quick vegetarian pasta dish!

Greek Pasta with Tomatoes and White Beans

INGREDIENTS
2 (14.5 ounce) cans Italian-style diced tomatoes
1 (19 ounce) can cannellini beans, drained and rinsed
10 ounces fresh spinach, washed and chopped
8 ounces penne pasta
1/2 cup crumbled feta cheese

DIRECTIONS
Cook the pasta in a large pot of boiling salted water until al dente.
Meanwhile, combine tomatoes and beans in a large non-stick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.
Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly.
Serve sauce over pasta, and sprinkle with feta.

a really good one is asparagus bowtie pasta

Ingredients:
? 1 Tbsp salt
? 1 lb bowtie pasta
? 2 Tbsp butter
? 2 Tbsp extra virgin olive oil
? 1 lb cremini mushrooms, sliced thick
? 1 lb thin asparagus, trimmed and cut into 1 inch pieces
? 1/8 tsp nutmeg
? 1/2 cup roasted salted shelled pistachio nuts
? 1/2 cup grated Parmesan cheese
Method:
Bring a large pot of salted water to a boil. Add bowtie pasta and cook until al dente, approximately 10 minutes, drain. Melt butter and olive oil in a large skillet over medium heat. Add mushrooms and asparagus and cook until tender, 5-7 minutes. Remove from heat and toss with pasta, pistachios and parmesan.

The good thing about pasta is that you can put on it whatever you like. Tomatosauce, vegetables (raw, steamed, mashed), corn, peas, legumes, cheese (normal and vegan)... Use your immagination, everything works. Try even make pastasalad. Make the night before the double amount of pasta and eat half for dinner warm. The other half conserve and put cheese, fresh vegetables, pickles, hardboiled eggs,... oil and vinegar on.
