What do you put in your Lentil Soup?
I just made some with just the basic ingredients .... chopped onions, chopped carrots and 3/4 bag of lentils. It came out alright but I was wondering if anyone had a recipe that was REALLY REALLY good... what do you put in your lentil soup?

I LOVE this recipe - a friend sent it to me and I tried it out of curiosity, though I thought it sounded a bit strange with the apricots. But once I tried it, I was blown away - it's now my absolute favorite dish! :) I really suggest you try it. (I also sometimes substitute a chili pepper for the green pepper, but only do that if you really like spicy food - it packs a lot of punch, lol.)
Armenian Lentil Soup
Servings: 6
1.5 cups dried lentils
6 cups vegetable stock
1/2 c chopped dried apricots
3-4 tbsp vegetable oil
1 c chopped onion
2-3 cups cubed eggplant
1.5 c chopped tomatoes
1 green pepper chopped
1/2 tsp cinnamon
1/4 tsp cayenne
1 tbsp paprika
1.5 tsp salt
1 tbsp fresh mint (optional)
1. Rinse the lentils and then bring them to a boil in the stock. Reduce the heat and simmer covered for 20 mins. Add the chopped apricots and simmer covered for another 20 mins.
2. Meanwhile, sauté the onions in the oil until translucent, and then add the eggplant and 4 tbsp of water. Cook covered on med heat stirring occasionally, until the eggplant is almost tender.
3. Add the remaining vegetables, dried spices and salt. Cover and cook until tender, about 10 minutes. Stir the sauteed vegetables into the cooked lentil-apricot mixture and simmer for 15 mins. Add the parsley and mint and serve.
Bacon or sausage, or if you are a vegetarian, bacobits. Salt, cayanne pepper, black pepper, and celery.

I love spicy italian sausage in my lentil soup. Gives it a great kick.

Try different spices...like my mom used curry and bay leaves, and there are so many others to choose from. Or don't add so much water and make it more into a stew and put it on some wild rice.

You've got to add some celery, that will kick the flavor up quite a bit. A can of diced tomatoes, some rice (brown), garlic, basil, oregano, thyme, and bay leaf. That is lentil and brown rice soup. It'll stick to your ribs, keep you warm all winter, cure what ails you and might help world peace!
Might try some chicken stock as a base, garlic
I use your ingredients, plus add some chopped celery, some garlic, salt, pepper, a bit of cumin, and a bay leaf.
i put all that and a pinch of cumin, and sometimes i like to add lemon juice on my plate...i also use chicken bouillon cubes to cook it in...and garlic, i put that in most anything
I cook my lentils in homemade veggie stock, and add all sorts of veggies. Cabbage is great with lentils, either red or green cabbage. I also put in fresh herbs
Mine's pretty basic, too, but I like it. A serving of lentils (1/3 cup). I let that boil with veggies steaming on top. When the lentils are done, I add some canned tomato sauce and the veggies and whatever spices I feel like pulling out (usually taco and chil and tumeric). I used to buy some Italian to Mexican canned tomatoes at Aldi, but I don't make it there the way I used to.
