Try a simple spaghetti supper. Get a jar of meat and dairy free pasta sauce, and cook up some pasta. You can saute some onions, zuccini, garlic, etc to throw into the sauce, too. Get a loaf of french bread, and warm it up in the oven, then make a spread out of margarine and honey (if she eats honey). You can make a salad for a side dish, or even saute up some green beans (canned is fine) in olive oil, garlic and almond slices. I think she would be really pleased with it. :) Good luck!
wow!
im a vegaterian too
um if i went to someones house i would not want meat so give her a variety
salad, fruit, mac and cheese.
stuff like that.
a simple cous cous curry with some sliced onion, celery, and green peppers would be nice, with some grilled veggie kababs. Just thread some lightly steamed new potato, pearl onions, mushrooms. green pepper, and zuchini and yellow squash on wooden picks and broil or grill (marinate them in rosemary, garlic and olive oil for a little while. Serve with pita bread and a simple salad
I'm not vegetarian but every now and then I want nothing to do with meat and that is when I turn to the recipes at the links below which are easy, quick, simple, and economical:
,I am semi veggie, I really enjoy the green bean casserole cant go wrong its pretty and she should enjoy it. k.

I'm a vegetarian. Not everything that we eat has to be "vegetarian", as in meeting all the nutritional needs of a vegetarian. It just means, don't give us any meat, fish or poultry products when you give us a meal. We understand and don't want to be a problem to our hosts.
Pasta is always a good bet. You can search for great vegetarian recipes. Or search for pasta recipes and make sure the ingredients are okay. And serve it with salad or vegetables just like regular people have.
Haystacks
This is an interesting and delicious, fun way to serve beans and salad in the same dish. An all-in-one meal.
To serve: Place corn chips or croutons on a plate. Spoon pinto beans on top. Then layer with the following: shredded lettuce, chopped tomatoes, finely diced onions, chopped black olives and cheese sauce.*
Add or subtract items, be creative, make it a family project, each having a different ingredient to get ready.
Veggie Lasagna..........it will also satisfy your taste buds
this is really simple and really tasty. Just serve with a leafy green salad and bread sticks to complete the meal
Mexican Beans and Rice
Ingredients (use vegan versions):
2 cup Cooked black beans
1 10oz pkg frozen whole kernel corn
1 cup raw white rice (can use brown, but should parboil a little)
1 jar (16oz) thick and chunky mild salsa
1.5 cup V8 (or you can blend together 3/4 cup canned diced tomatos with green chiles and 3/4 cup water)
1/4 teaspoon oregano
1/4 teaspoon cumin
1 8oz bag shredded cheddar cheese
Directions:
Heat oven to 375 Combine all ingredients, stir to mix and bake for 1.25 hours, or until rice is tender, and casserole has started to thicken. Top with cheese and bake till melted.Enough for four servings.
I used minute rice, so it only took 30 minutes to cook.
Since you're not very experienced at vegetarian stuff yet, I say "go simple"... Rice, steamed summer squash with strips of peppers and onion, and soy beans (edamame)... Or do yourself an even bigger favor and buy some veggie burgers, have a nice garden salad, and some corn chips. Also, may I recommend a nice blush chablis or crisp white wine? I think you'll do fine if you go simple, instead of trying something harder. I have found that vegetarian dishes can be very yummy, but if not done just perfectly, can be awful. Vegetable dishes are usually less forgiving. What I mean is, with steak, if it's a bit overcooked, it's still a steak... add some A-1 and it's yummy. Vegetables that are a little overdone are mush... You could turn them into soup or mulch for the garden, but they just aren't acceptable, even with A-1. lol.... So go simple with things that aren't easily destroyed. Good luck.
You could make a casserole, there are plenty of vegetarian casseroles. For a side dish, salad is always a good bet. Also, I'm a vegetarian and I LOVE curry dishes! So many curry dishes are vegetarian and nutritional, but taste really, really good.
And pasta is usually a safe bet, although I myself don't like any pasta other than ramen. You could make a vegetable lasagna.
A veggie pizza would be a good thing to make. You could have tacos with beans instead of meat, and soy cheese if she is vegan. But if she is vegan, remember, no cheese, milk, honey, etc.

Like someone said above, grab some veggie burgers and grill. Easy, and you can't go wrong. Maybe grab some avocado or some other stuff to top the burgers with.
Use tin foil to make a packet and put in some sliced squash/zuchini, mushrooms, onions, drizzle some olive oil on it, and add some salt and pepper and toss that on the grill away from the flames for about 15 minutes. Add in a salad and a couple beers and your set.
Try making a fresh salad, some garlic bread, and Eggplant (Aubergine) Parmesan or Manicotti (or some cheese ravioli, or toretlini... The list goes on and on). Both are pretty easy, taste great, and who doesn't like Italian? Add to that a nice wine, and you have a great diner for two.
Just be sure that she is vegetarian and not vegan, because these recipes use cheese.
Manicotti
* 1 cup part-skim ricotta cheese
* 1/4 pound shredded mozzarella cheese
* 1/4 cup and 2 tablespoons grated Parmesan cheese
* 1/2 teaspoon dried parsley
* salt to taste
* ground black pepper to taste
* 1/2 (16 ounce) jar spaghetti sauce
* 2-1/2 ounces manicotti pasta
1. Cook manicotti in boiling water until done. Drain, and rinse with cold water.
2. Preheat oven to 350 degrees F (175 degrees C).
3. In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, parsley, and salt and pepper. Mix well.
4. Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
5. Bake 45 minutes, or until bubbly.
Eggplant Parmesan
1 eggplant, washed and sliced into 8 1/2 inch slices,
2 cups mozzarella-parmesan cheese blend
1 1/2 cups breadcrumbs, seasoned with garlic powder
salt
pepper
1 cup olive oil
2 cups spaghetti sauce
1. preheat oven to 350 degrees.
2. heat olive oil in med frying pan.
3. dip eggplant into breadcrumbs.
4. place 4 slices at a time, into olive oil in frying pan.
5. fry eggplant on each side, until each side is golden brown (you want them crispy, not mushy).
6. remove eggplant from skillet, and place on paper towels to drain excess oil.
7. repeat dipping and frying proces with other 4 eggplant slices.
8. place 1/2 cup spaghetti sauce into 9x13 casserole dish.
9. place eggplant into bottom of cassserole.
10. pour spaghetti sauce over top of eggplant.
11. sprinkle mozzarella/parmesan cheese over top of spaghetti sauce.
12. bake in 350 degree oven for 30 minutes or until cheese is melted.
Serve over pasta if desired.
A pasta dish with a chunky sauce or a
Veggie stir fry over rice
Both take no time at all and are easy and healthy.
I would serve some crusty bread and a side salad with the pasta.
How about a veggie Spaghetti Bolognese?
This has got to be the easiest thing in the world to make - it's the first main meal I ever cooked. All you really need is some tomatoes (if you use fresh - impress your date by peeling them. To do this boil a pan of water, dunk the tomatoe in for 13 seconds and then remove with spoon), mushrooms and peppers.
Other things I like to add include courgette (zucchini), roughly cut spinach and lots of fresh garlic and basil.
If your date is a veggie for health reasons, she might like it if you serve wholemeal pasta.
And if you have any garlic left, you could make some garlic bread (but check that she's not vegan otherwise you will need vegan butter).
Something simple to make and delicious, hmm? Stir Fry!
It's one of the easiest things to make, buy all your favorite veggies, (Brocolli, Snap Peas, Zucchini, Peppers, anything that can be heated) Saute all your onions and garlic in Butter or if they're Vegan use oil. Then add your veggies, add some spices, maybe some sauce (sweet and sour, or peanut sauce) throw on top of some rice and wah-lah you're done. If you wanted to try tofu, I would recommend marinating it you have time, then frying it, in smallish chunks, about 1/2 inch maybe.?
If you're able to find Tempeh, you could fry that as well, cut into thin sticks, and maybe add some coconut milk. There's no recipe really, just wing it but taste as you go along.
You could also throw some caraway seeds in the rice. But only do what you're comfortable with and it will turn out great. Cooking vegetarian is really easy, just think out of the box!
Simplest vegetarian meal- Spaghetti.
1. Spaghetti
2. Sauce. Just get a couple cans of prego without meat. There's lots of kinds that don't have meat, There's mushroom, peppers and garlic, etc.
3. Optional meatballs for the carnivores at the dinner. If you want, you can make meatballs ON THE SIDE, in their own sauce, for those who eat meat. Just make sure the meat is separate from the sauce that the vegetarian will eat.
3. garlic bread
4. Salad without cheese (in case she's vegan)
5. Salad dressing without dairy (italian, Vinagarette)
6. Vegetables such as green beans, peas, etc
It's a full meal that pretty much anyone likes.
That is my recommendation if you aren't used to cooking vegetarian. And it's compatible with meat eaters diets, too.
pasta definitely. you can do any kind of pasta with simple marinara sauce.
simple? eggplant parmesan, bean chili. Veggie burgers

make your own veggie sushi bar.
Okay... im vegetarian. Here are a few of my favorite meals.
1. A large salad with snap peas. Snap peas are great if you can find them at your local store. Just heat and shock (throw into boiling water for about 1 1/2 minutes, then throw in bowl of icy water)
2. Veggie burgers. Find them in the freezer section at your local grocer.
3. Veggie kabobs.
4. Eggplant parm. Ummmm. I'd go with that.
If I were you I would not rush out to a store and grab tofu or soemthing like that try this

fruits and vegetables and grains. I don't think mac and cheese
is vegetarian. You can make a sandwich of lettuce onion tomato. They like whole grain wheat bread. Offer apples, bananas, pineapples, baby carrots. Cooked rice. See what she goes for.
