Best way to flavor agar-agar? (aka. vegan Jello)?

I havent been sick since before i became vegan, and now i am sick and i miss jello. I always ate it when i was sick (I didnt know any better!)

I was able to find some agar-agar at the local Health food store but they only had the unflavored kind. What is the best way to flavor it?

All good answers so far but they missed my favorite sneaky trick to make an intensely flavored gel. Use thawed frozen juice concentrate! You'll have to experiment to get it to your taste but I'm weird and like it full strength.

A sort of 'rule of thumb' is to use 1 tablespoon agar to 1 cup liquid and simmer for 5 minutes. With juice concentrate you have to experiment a little because you start to get a multiplier effect as the agar interacts with the pectin in the concentrate. With apple juice I use around 2 1/4 tsp; other juices depend on how much pulp is present. Unstrained citrus concentrate with a full tablespoon can sometimes resemble a baby teething ring (but it's kind of fun).

If you get a gel that's the wrong texture you can always reheat it and add more agar (if soft) or liquid (if firm) to get the texture you like!

Use juice instead of water for preparation.

I'd have to agree with using fruit juice for at least half of the liquid. You could also use extracts to flavor it, coconut milk, and, assuming it's vegan, KoolAid drink mix and Tang? The sugar would be good for you w hen you're sick too.

Mix the unflavored agar with fruit cocktail.

I bring some RW Knudson black cherry juice to a boil, add the agar agar, simmer for a few minutes, then refrigerate. It gels very quickly, and is yummy, It doesnt melt in your mouth like jello does, but has the same taste as jello
