Need a recipe?

I need a really good recipe for a vegan indian bread and pudding. If you know of any it would be greatly appreciated. Also, I know its a long shot, but I ate something once in Russia and in Greece that was called...shambastala or shambalasta...possibly without the L in the name? It was salty-sweet & looked like a cookie.. Thanks so much

Are you looking for American Indian or Asian Indian breads and puddings? Do you have more details on the cookie? Add more details to your answer and I may be able to help with the cookie and could certainly help with the Indian recipes but I'd like more details on what types of breads and puddings (along with the correct ethnicity) before deciding what recipes to give. :-)

Go to Phaedrus for the cookies; I can't find anything like that (as yet) but I'll keep looking.

For an American Indian bread type pudding here's one from my archives.

4 cups soymilk
2 cups raw sugar
1/3rd cup cornmeal (I use blue)
1/3rd cup molasses
2 tbl EarthBalance
4tsp salt (I usually use 2 tsp Flavacol instead)
2 tsp ginger
2tsp cinnamon
1/2 tsp Xanthan gum

Mix the cornmeal & molasses and add to 3cups simmering soymilk. When thick remove from heat and stir in everything except 1 cup soymilk. Bake for 2 hours at 300F in a greased baking dish. After the first baking pour the resererved soymilk
over the top and continue baking another 2 hours.

It's not too hard to convert their recipes to vegan! I like Piki bread but it's usually off-limits since they normally grease the stone with a sheeps brain but I met an Acoma vegetarian chef that makes Piki using a cotton cloth infused with coconut oil (works great!), something to keep in mind if you look through the recipes in the link.
