Thank you i saw how wrong the treatment was to those animals and i am not going to turn back to those ways. When i looked at that i thought about that happening to my poor dobtsons and my boxer and it made me so upset so i joined and am going to be vegitarian.

an easy thing to make and it is cheap is onion curry ,rice,fried onion curry powder,honey to caramalize it then mix with rice
(for students its cheap and your full after it)

Be prepared for all of the idiots that will no doubt post saying it stand for People Eating Tasty Animals. This section is full of uniformed buttheads, who are jealous of us veggies and like to try to convert us back to their wicked ways. Ignore them, they are too closed minded to know what they are rattling on about. Peta will send you a free vegetarian started kit that you can request on their site. You will find alot of useful info here as well-read through some of the other vegetarian questions. Ignore the morons, take whatever you find useful. Good luck, and congrats!

VEGAN CHILI RECIPE:

Ingredients:
olive oil
2 large yellow onions, diced
2 cloves garlic, minced
1 red pepper, diced fairly large
1 green pepper, diced fairly large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup ground carrots
1/2 cup ground celery
5 mushrooms cut into quarters
1 package frozen corn
2 cans black beans (or any other kind of beans you like - chickpeas work well, too)
1 1/2 cup picante sauce
1 t. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired

Directions:

Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.

Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.

Serve with grated cheddar and cashew nuts, if desired.

This recipe for Vegan Chili serves/makes 4

Have not tried this next one yet. It is supposed to be good for colds...

Garlic and Herb Pasta

(This serves 2 really hungry people but can be spread out to 4 people if you serve it with a salad or something.)

24 cloves of garlic, peeled (This is a really boring job but it's so very worth it.)
2 TBSP olive oil
1 1/2 cup veggie broth or water
A couple of Roma tomatoes and a little onion, maybe some red pepper
~2 T dried basil
Tarragon, oregano, pepper to taste (the more the better, usually 2 tsp tarragon is perfect)
Whatever pasta floats your boat (I like penne or mostaciolli)

Sautee the garlic cloves (still whole) in the olive oil for 3 minutes, stirring frequently and being VERY careful not to burn them. If you do, throw em out and start over b/c burned garlic in this is REALLY gross. Add 1/2 c of the broth and turn the heat to low and let simmer for awhile, about 15 minutes or until the broth has evaporated mostly. [You should start the water for the pasta now.]
By this point, the garlic should be soft enough to crush with the back of a wooden spoon. Crush about 3/4 of them like this. Add the rest of the broth, the sliced up tomatoes, the chopped up onion, and the herbs.
I've actually never measured out the herbs I put in, so you should taste the broth and see how you like it. Wait a couple minutes for the tomatoes to shrivel up, add more pepper, and turn the heat off. Try not to drool into the broth. :)

****Marinated Veggie Kabobs****

Ingredients (use vegan versions):

1 medium eggplant
2 small zuchini
1 or 2 red or green bell peppers
8 medium button mushrooms
2-4 small-medium yellow onions
1/4 cup cider or balsamic vinegar
1 tablespoon spicy brown mustard
1/2 teaspoon rosemary
2 or more cloves garlic chopped
salt and pepper to taste

Directions:

Wash and cut the vegetables into chunks about 1 inch thick (I know the peppers will not be this thick, but cut them into large pieces). Place the chunks into a large bowl. In another bowl, combine the vinegar, mustard, rosemary, garlic, and salt and pepper and whisk into a uniform liquid. Pour this liquid over the vegetables and, using your hands, turn the ingredients to ensure each piece is well coated. Cover with plastic wrap and marinate in the refrigerator overnight. To cook: preheat the oven to broil and thread the vegetables onto metal skewers. Reserve the marinade to baste kabobs. Place the skewers in a broiler pan and cook under the broiler for 10-15 minutes. Baste the cooking kabobs with the marinade periodically during the cooking. Serve over rice or couscous with the leftover marinade as a light sauce. This is great as leftovers, too. The flavors intensify. You need to plan ahead a little to prepare this dish because the vegetables require a long time to absorb the marinade. But once the chopping and marinating are done, it is quick to do the final cooking.

Serves: 4-6

Preparation time: 30 min

****Meatless Hamburger Dinner Pie****

Ingredients (use vegan versions):

about 5 or six potatoes
vegan cheddar or mozzarella cheese
fresh broccoli
6-8 Boca Burger patties (meatless burger substitute)
1/2 cup ketchup
salt and pepper
2 teaspoons chopped garlic
1 cup chopped white onion

Directions:

Grill Boca Burger patties and break apart so it looks all ground up. Add ketchup, garlic, onions and seasoning.

Cook broccoli until soft.

Boil and mash potatoes with some soy milk and soy butter and garlic salt.

Spread soy meat mixture in a glass baking dish. Spread cooked Broccoli over soy meat mixture. Spread mashed potatoes over the broccoli. Cover potatoes with vegan cheese.

Bake at 300 degrees for about 25 mins.

A really good potato pie dish for dinner!

Serves: 6

My favourite quick tasty veggie recipe:

1 large flat mushroom
1 tablespoon relish or sauce of your choice (red onion marmalade works well, or cranberry sauce)
1 slice rennet-free cheese

Put sauce on the mushroom, top with cheese, stick it in the oven until the cheese melts. Delicious!

I'm sure it would not be hard to find a vegetarian cookbook in a bookstore somewhere.

Try this website: www.vegweb.com. They have a ton of user submitted recipes with reviews. Many of them I have made turned out excellent! You can also join the vegan myspace by going to: www.vegspace.com.
A lot of your recipes will come from experimenting with different foods. Go to your local health food store and pick up a package of garden vegetable flavored tempeh. Then follow the recipe below. It's very yummy!

1 package garden vegetable tempeh
6 T mirin (or plain white cooking wine mixed with 2 T sugar)
4 T olive oil
1 onion, finely chopped
1 c salsa
1 c frozen corn (or you can use fresh or canned)
1 avacado, diced
whole wheat wrappers

In a large skillet, heat the mirin and olive oil. Saute the onions until translucent. Cube the tempeh into 1/4" cubes and add to the pan. Cook over medium high heat until all the liquid is absorbed. Add the salsa and corn, and cook until almost all the liquid is gone. Stir in the diced avacado and turn off the heat. Serve in the whole wheat wrappers with some tofutti sour cream. :)
