Any suggestions, preforablely something that can pass as being health!

my favorite comfort food lately is breakfast cereal with soymilk. it's also good to munch it dry. there're so many varieties these days, I never get tired of cereal.

check labels to make sure there's no gelatin, of course. avoid the overly sugary ones if you want to keep it healthy, but I recommend cinnamon toast crunch or golden grahams if you're in a sweet mood.

most kinds of granola provide a good bit of protein and fiber, those are always good.

Healthy comfort food? I think you're missing the point. Go suck on a carrot.

i love carrots and ranch, a salade, corn , asparagious with butter and salt very good

fresh veggies, like carrots, celery sticks, cucumber with cheese and a dip. U can have salsa, various varieties available or make ur own, with mayo and garlic etc.

oatmeal with raisins and brown sugar... i like it cuz it makes you feel warm inside

sliced raw vegs such as celery, carrot, cauliflower and cherry tomatoes with a garlic cheese dip

I like preskinned carrots in onion & garlic dipping sauce.

Spinach quiche or vegetable lasagna.

If you make it the right way, spaghetti can be a healthy comfort food. Right now, my choice is hummus. Yum!

Yes binge on Linda McCartney's very tasty spinach cannelloni. It doesn't look very appealing but it sure is yummy. Hope this helps.

Pizza. Make it on a fat-free pita. mmmm

My fave is roasted veg, baby toms, baby corn, shallots, courgettes, sliced carrot, roasted in a little olive oil with sea salt, garlic and black pepper. Add a small handful of cooked pasta shells. Gorgeous, feels naughty especially with a glass of crisp cold wine.

Deep-Dish Potato Pie
If you're looking for a rich and elegant dish and aren't worried about calories, give this beautiful potato pie a try.

Yield 6 servings
Time 1 hour 15 minutes

Ingredients 2 pie crusts
2 pounds potatoes (about 6 medium), peeled (optional) and thinly sliced
1 large onion, peeled and thinly sliced
1 c sharp cheddar cheese, grated
2 T fresh parsley, chopped
black pepper
1 c whipping/heavy cream
? c cold butter, cut into small pieces

Directions Preheat oven to 400. Lightly oil pie plate.
Roll out 1 pie crust and place in pie plate. Arrange layers of potatoes and onions, then top with cheese, parsley, and pepper. Pour cream on top and dot with butter. Roll out the other pie crust and arrange on top, sealing edges. Slice the crust in a few places to let out steam.

Bake for 10 minutes, reduce oven to 350, and continue baking for 50 minutes. Poke potatoes with fork to see if they're done; if not, keep baking another 10 minutes and try again.

Remove from oven and let sit for 5 minutes. Slice and serve.


Italian-Style Macaroni and Cheese
Try this macaroni and cheese made with great Italian cheeses.

Yield 6 servings
Time 30 minutes

Ingredients 2 c bread crumbs
1 c Parmesan cheese, grated
salt
pepper
6 oz cold Taleggio or fontina cheese with rind, diced
1 T butter
1 T flour
1 c cream
1 pound macaroni or other small pasta shape

Directions Preheat oven to 450.
Bring water to a boil and cook the pasta for about 5 minutes, until not quite al dente. (If you are using fresh pasta, you can skip this step - the pasta will cook in the oven.)

Meanwhile, combine bread crumbs, ? c Parmesan, salt, and pepper in small bowl, and set aside. Combine Taleggio and remaining ? c Parmesan in large bowl.

In small saucepan, melt butter over medium heat until it stops foaming, then whisk in flour for one minute. Begin adding cream slowly, whisking constantly, until smooth. Bring to boil, the remove from heat. Add salt and pepper, cover, and set aside.

Drain pasta, reserving ? c of cooking water. Add reserved water, pasta, and cream sauce to the large bowl, and stir until the cheeses melt.

Pour pasta into baking dish, sprinkle with crumb mixture, and bake about 10 minutes, until golden. Serve hot.

Notes The better quality cheese you use, the better the end result will be.


Shepherd's Pie

This vegetarian shepherd's pie recipe is a simple yet delicious lambless version of the real thing.

Yield 6 servings
Time 1 hour

Ingredients 2? T olive or vegetable oil
2 cloves garlic, minced
? c onion, minced
1 large tomato, chopped
6 c mixed vegetables, finely chopped
Some possibilities:
- bell peppers
- carrots
- celery
- corn
- green beans
- leeks
- mushrooms
- peas
- spinach
- zucchini
1 c vegetable stock or water
1 t soy sauce
pepper
2 to 2? c mashed potatoes
Garnish ideas: paprika, minced parsley, sesame seeds

Directions Heat 2 T oil over medium heat, add garlic, and sauté for 2 minutes. Add onion and continue sautéing until soft, about 5 minutes. Add tomato and cook for two more minutes, stirring frequently. (If you need to make the mashed potatoes, start them now).
Add stock and vegetables, bring to boil, cover, lower heat, and cook until vegetables are tender, about 5-10 minutes. Add soy sauce and pepper, taste, and adjust seasonings as necessary.

Preheat oven to 350.

Use remaining ? t oil to grease pie plate. Arrange vegetables in it, then cover with a layer of mashed potatoes. Garnish.

Bake until bubbly, about 30 minutes. Serve hot.

Notes For a more substantial dish, you can add/substitute things like pre-cooked tofu, lentils, or seitan.

I make a vegetable stew with potatoes, carrots, onions, diced tomatoes and veggie broth (along with other seasonings) in the crockpot.

I also like to roast the same veggies after tossing them with a balsamic mixture.

how about veggie stew or veggie shepards pie with lots of mash potatoes, yum and i am not even vegetarian x.

Healthy Thumb Print Cookies+ I have included 2 other recipes

* 1 cup almonds, coarsely ground
* 1 cup rolled oats, coarsely ground
* 1 cup whole wheat or splet flour
* 1/2 tsp cinammon
* 1/2 cup grated coconut (optional)
* 1/2 cup safflower oil
* 1/2 cup maple syrup or rice syrup
* pinch of salt (optional)
* water
* fruit juice sweetened jam

Ingredient Option: substitute pecans for the almonds.

Preheat oven to 350°F. Process almonds and rolled oats in a blender or food processor to a coarse grind. Add rest of ingredients, adding enough water to make a moist dough. Form walnut-sized balls and place on an oiled cookie sheet. Press your thumb gently in the center and fill with jam. Bake 15 minutes or until golden brown.

P.S: You can replace honey with Madhava Agave Nectar in these recipes.

I always love oriental salad inside it is all different types of lettuce, and roasted almonds, and carrot peals with mandrain oranges and onion squares with a 5 cheese italian salad dressing! Its delicous!

CHEEESE NAAAACHOOOS

Hello :)

This is a quick, easy and healthy snack, you will need

2 slices of bread (rye bread or sprouted wheat is prefer-ed)
1 ripe avocado
salt
pepper
toaster

Mash up the avocado, toast up the bread and spread on the mashed avocado like you would peanut butter. Sprinkle on some salt and pepper. You can also add a few slices of tomato, and some alfalfa sprouts to make a killer sandwich!

Comfort food is very personal. It's based on fond memories. It's not likey that some stranger's comfort food is going to be meaningful to you.

For instance, my comfort food is vegan cookies and cupcakes that I make and give away. That gives me comfort. My sister-in-law loves Wendy's. She hates the food, but has fond memories of working there in her teens. So when she's out of sorts she goes to Wendy's.

Coffee is very soothing to my nerves when the day is shot.

Think of your "standard" comfort food and make a vegetarian version of it.

pasta. fondue, pizza, baked mac and cheese. Vegetable soup, bean soup, split pea soup. Alfredo pastas, eggplant Parmesans, lasagna. I love vegetable curry and semosas and other indian food, really filling. hot cocoa, veg marshmallows (most marshmallows contain gelatin, a veg no-no). Three bean chili can seem healthy. Miso soup, is so savory and good. Vegetable tempura (a japanese fried food) is sooo good. ITs endless!

i personally like soup. anything warm and comforting is good.

comfort drink is a glass of peach tea w/ two teaspoons of sugar.

i would make a spicy tomato salsa
or vegg stew soup with bread
spanish rice with beans

Homemade flapjack is quick and easy. It's kind of healthy - you can replace the butter with margarine if you want a lower fat version, or if you're vegan.
Homemade chocolate cake is always good too. Not exactly healthy, but at least if you make it yourself you know what's in it.
