How do you keep tofu fresh?

HI,
We have an opened container of tofu, but don't need to use all of it right now. How do we keep the tofu fresh? Does it need to stay in water? If so, how often should we change the water? How long can I keep the tofu before it spoils?

If you're going to keep it in the fridge, it needs to be in water (mostly submerged) and the water needs to be changed daily. You should definitely use that within a week. If that week is up and you still haven't used it, you can throw it in the freezer (water and all, or you can drain it if you so wish). Like the other posters said, that will change the texture. The water in the tofu causes ice crystals that make the tofu expand and when it's defrosted, they leave little pockets that give the tofu a spongy, chewy (some say meatlike) texture.

Personally, I press all of the water out and then freeze it. When you thaw it, it has a meaty texture that is just wonderful. Then I can marinate and saute it with whatever I wish. I often start with a whole block of tofu, pressed, frozen and then thawed when I need it. I like the texture change.

Yes, the tofu should stay in water. You should change the water every day. Don't keep it more than a week. If you're not going to use it, then do press the water out - gently - wrap it in plastic and freeze it.

Keep it in the water, it only lasts a few days after opened if kept in the refrigerator.
Tofu can be frozen (without the water) but will be chewier when thawed and eaten. Some people freeze tofu for the texture change.

Check the d ate on it when you buy it. Buy the harder kind. And don't buy too much at a time. Use it up quickly. If you really have too muchyou CAN put it in the freezer but the cold will make it expand and it will change the texture. Some dont like the expansion and some like it enough to do it on purpose.

put the tofu in a bowel of water and change every day.it will keep for 3/4 days

if it's the slice kind wrap in foil tightly and keep in fridge meat tray that's usually below the freezer. It keeps a week. The more liquidy tofu put in plastic Container and cover with lid keep in Fridge. Keeps for about 5 days!
