and why has nothing more modern been discovered?Does anyone know? I have heard this rumor but never the details of the process...

It is unfortunately easier and cheaper to do it this way. Simply stick to products that are approved as vegetarian and vegan, because every ingredient is checked (at least here in the UK) and avoid white sugar.
sugar as is made from sugar cane is not Crystal white. they use bone char to colorize the sugar
its like magic, you put animal bones on top of a lot of sugar and it like filters it for you, it's cool, you can also filter other still with the bone char

There is a new process (pat.pend.) to make real white cane sugar without the bones. I visited the factory in Louisiana last year and got to learn more about sugar than I ever wanted to know
