Do anyone have a recipe for a vegetable casserole with bread on top?

I cant give you a recipe, as I tend to cook by just chucking stuff in a pot, but I make a nice veggie casserole with a potato topping. I just cook some veggies, brocolli, cauliflower, potato, onion, in a basic white sauce (sometimes with cheese)whatever I am in the mood for. I top it off with well seasoned mashed potato and bake it until the potato browns and crisps up a bit. My version of a vegetarian sheppards pie.

About 4 or 5 pounds yellow squash or mix of that and zucchini.

Slice squash in 1 inch chunks and boil in slated water until just tender. Drain add lots of butter, salt and pepper. Pour into a long flat casserole dish and top with lots of shredded cheese and breadcrumbs. Bank at about 325 for about half an hour.

You can drain a can of Rotel mild tomatoes and add to the squash but you need to put some grated cheese in with the squash at that time.

no but u can make a recipe! i would try having bread on the bottom veggies in middle, then bread on top. BTW it would be does anyone have a recipe...... blaah blah.

Easy easy easy and good

1/4 c Melted butter
1/4 c Flour
2 c Milk
8 oz. Cream cheese
Cauliflower, broccoli, onion, and carrots or whatever veggies u want
1 c Grated cheese
bread



Melt butter, add flour and cook until bubbly. Add 2 cups milk and 8 ounces cream cheese. Cook until thick. Parboil cauliflower, broccoli, onion, and carrots. Put in a casserole dish and cover with white sauce. Top with cut up pieces of bread over the entire casserole. Sprinkle grated cheese over top of casserole. Bake at 350 until bubbly; about 30 minutes
