What is a good vegetarian dish to serve at a wedding reception?
My cousin is getting married here soon and I'm trying to help her out some. A few of the guests are vegetarian...so, any ideas on what to serve would be appreciated. Thank you!

They won't eat fish or anything like that. Nor will they eat eggs. They'll eat milk products though.

Ugh, nothing. Ok, just kidding, want to make sure I get plenty of thumbs down from the meat haters.
Now, are you talking like a main course? Finger Food? Side dish?
Main Dish: Do Couscous with veggies in a sweet and sour sauce OR you can do eggplant lasagana, or just pasta with steamed veggies.
Finger Food: Do stuffed mushrooms, stuff with spinach and garlic,
Side Dish: Well any veggie salad or steamed or whatever or big fruit salad should do the trick.
What kind of vegetarian are they? Some eat fish and chicken, some dont. Some eat eggs, some dont. How about a buffet style salad bar and they can choose things they like? Either that or juts ask them what they eat!
Eggplant parmesan!
Something else I just discovered is smoked mozzarella cheese with tomato and basil on bagels, but for finger food, crackers might be better. Mmmm, stir fried vegetables with tofu... yum. Ooo, just thought about a vegetable paella - yummy! I'm gettin hungry.
Just serve what you would at any wedding. The vegetarian guests can just omit the meat. Make sure the pasta dish has marinara sauce instead of meat sauce.
zuchini, eggplant, or green peppers stuffed with stir fried rice, steamed asparagus with parmesan, and grilled tomato might be nice. A nice grapefruit sorbet served with a crispy cookie for dessert. A stuffed veggie would be nice as it is more unsual. It could be stuffed with mushrooms, regular stuffing, or a water chestnut stuffing
Try an alfrado with different type of noodles. Do a basic garlic base and blend it in with the sauce, and there you have it. Hope that helps you out a little.

Any kind of pasta is great. You can use a garlic butter sauce or a red sauce. If you have a nice budget, you can even add tofu.
But it is a great idea to have meat dishes where the meat is in separate burners. That way, the meat-eaters can put and on, and the veggies can leave it off.

There is plenty of dishes, out there for vegetarians! Well salad, thats not a main dish but maybe a nice fruit salad on the side. For a main dish you can make pasta, there is plenty kinds of pasta. Maybe, you could serve soup. Those are just a few dishes you could use. But, maybe you can find something else on a vegetarian website.

We had a individual veggie "pot pies" but they were wrapped in phyllo dough, rather than pie crust. Very tasty.
As the others have said, there is a lot of leeway. Much of it depends on budget and style of catering, of course.
I think a lot of it depends on what the other guests are getting. If all the other guests are eating spaghetti and meat sauce, you may not want to give vegetarians a teriaki tofu stir-fry (which is what I would suggest if it will work). If the main course for everyone else is a meat, starch, veggie kind of meal, I would think that almost anything would work. Just try not to use a completely different strong flavor - in my experience non-vegetarians always want to try what the vegetarian is eating and you don't want the ones that are lucky enough to get a taste to have something that counteracts with what they have already eaten.
Of course, if you have a caterer, they probably have a list of options that they have done in the past or have their own ideas so definitely talk with them. If you are really stuck, call on of the vegetarian guests for a suggestion.
I'd say a nice big salad dish. Make sure it has alot of things in there so that they won't feel like they weren't being thought of much.

Serve a pasta dish. Creamy pastas are elegant so they are appropriate for weddings. You could also offer the pasta dish as a "healthy" alternative entree that happens to be vegetarian. Tomatoes, fresh vegetables, cream sauces, anything! Pasta is a boon when entertaining vegans and vegetarians.
Braised side of beef stuffed with chickens, ham and sausage, topped off with bacon dressing and liver sauce.
