Question:

Will these veggies all cook at the same temp and time?

I want to roast (in the oven) rutabaga, parsnip, carrot, turnip, sweet potato.

1. What temp and how close to heat source?
2. Should I cut them in similar size pieces?
3. Will they all require the same amount of time to cook?
4. Will a splash of olive oil and some seasoning be appropriate?

This is my first time doing this and I know I need to experiment a bit and "just see what happens", but I also don't want to ruin and waste the veggies because they are expensive.

These are all similar density vegetables, they will roast together fine. Yes you should cut them into similar sizes. Make sure that you do not use extra virgin olive oil, which does not like high temperatures and will smoke with too stronger taste. Instead use an extra light olive oil which is perfect for roasting. Another wonderful alternative would be Avocado oil. I would suggest 200C in the middle of the oven for this type of roast, and it should take about 40+ minutes depending on the size of your vegetables. Season well, and add a sprig or two of rosemary. Some balsamic would also be great with some whole cloves of garlic. Season well with salt and pepper. Enjoy!

1. Cook in the pre-heated oven at 200 C on a high shelf for 30-40 minutes, until they're tender and turning brown at the edges
2. Cut the vegetables into large, chunky pieces (no smaller than 1? inches/4 cm) and yes, preferably all in a similar size

4. Place all vegetables in a large bowl, then add herbs, garlic, olive oil and lots of seasoning and just use your hands to mix them. (The prepared vegetables can now be kept in a sealed plastic bag in the fridge for 2-3 days by the way).
When you're ready to cook the vegetables, spread them out on the baking tray.

3. Will they all require the same amount of time to cook? yes, all the veggies you have , have about the same density, just make sure pretty evenly cut with the other veggies

i love olive oil and herbs in everything i say go for it, be creative! i would also try seom fresh garlic for a melt in your mouth flavor.
