Here are some eggless pb cookies.......
INGREDIENTS
1 cup shortening
1 cup creamy peanut butter
1 cup white sugar
1 cup packed brown sugar
1/2 cup buttermilk
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
Mix the shortening, peanut butter, white sugar, brown sugar and buttermilk until smooth and fully combined.
Add the flour, baking powder, baking soda and salt to the peanut butter mixture and mix until well blended.
Drop cookies 2 inches apart on lightly greased cookie sheet. Flatten with a fork that has been dipped in flour. Bake at 375 degrees for 10mins.

sorry the only alternative would be using Better Eggs or white in baking you need that kind of protein for better results.
you can always replace the oil with applesauce.

Here is a recipe for oatmeal cookies with no eggs that yields thirty 3-inch cookies.
3 cups all-purpose flour
1 1/2 cups granulated white sugar
1 cup lightly packed brown sugar
1 tsp baking soda
1 tsp baking powder
1 cup shortening
3 cups rolled oats
1/2 cup raisins or currants
Preheat oven to 350 degrees and lightly grease cookie sheet.
Into a large bowl, sift together first 5 ingredients. Cut in shortening with a pastry blender or 2 knives until the mixture is crumbly. Next, stir in the rolled oats and raisins.
Drop cookies onto cookie sheet by teaspoon and bake for 7 to 8 minutes. Make sure they don't burn.
you can use egg beaters, thats what I use. they taste the same.

I personally recommend Ener-G egg replacer because it is handu and easy. You can just take any cookie recipe you like and add the egg replacer. There are also plenty of egg free recipes on the net. Just google the vegan cookie recipes or egg free cookies on allrecipes.com...
applesauce actually makes a pretty good egg substitute for baking. i made some oatmeal cookies just yesterday with applesauce and they came out great

It seems with most recipes, as long as you can make the dough sticky enough without adding egg it doesn't need egg.
