What to eat?!
What to eat?
I really have terrible eating habits, I eat fast food like everyday. I was thinking about going on a vegetarin diet, eating soy and tofu. Can anybody tell me like a meal plan or menu of good stuff to try?

I don't want to just not eat meat, I want to change my diet completely. Eating organic, soy, tofu, etc. and dishes or meal plans would be great. Thanks.

Hi,
Besides soy and tofu, it's important to eat a variety of other foods as well to ensure a balanced veg diet.
Here's where you can get some sample meal plans:

Stop eatting fast food. You can still eat meat that way.

i'm a vegetarian- tofutti products are really good and are availble in all supermarkets. go whole foods or wild oats and look at all the different products availbe, there are delicious meals that are made fresh in those supermarkets that are vegan and vegeatarian (including soups, salads, pastas and baked goods) good luck =)
It is really hard to change eating habits.
If you aren't used to cooking, I'd go to the freezer section of your local grocer and get all the organic/healthy frozen foods there are (Amy's is a good brand). Try them all. When you find some you like, look for a recipe online and then try it out. Cooking is a skill that takes quite a bit of practice although it is easy to get started and lots of things are really easy to make (like sandwiches or a bowl of wheaties and milk).
You could also go to a bookstore (used preferably) and browse the vegetarian cookbooks. Also, lots of regular cookbooks have great meat free and healthy dishes.
Eating vegetarian isn't all soy and tofu.
1. Veggie Fajitas
2 teaspoons vegetable oil
1 cup quartered,sliced onions
1 cup red peppers or green peppers or yellow bell peppers, cut into strips
1 (15 ounce) can black beans or pinto beans or kidney beans, drained
1/2 cup whole kernel corn
1 (1 1/4 ounce) package fajita seasoning mix
1/3 cup water
1/4 cup chopped fresh cilantro or parsley
6 flour tortillas, warmed
Heat vegetable oil in large skillet over medium-high heat.
Add onion and bell pepper.
Cook.
Stir occasionally for 3-4 minutes or until vegetables are tender.
Stir in beans, corn, fajita seasoning mix and water.
Bring to a boil.
Reduce heat to low and cook, stirring occasionally, for 3-4 minutes or until mixture thickens.
Remove from heat.
Stir in cilantro.
Spoon 1/2 cup fajita mixture onto each tortilla and fold in half.
2. Veggie Chili
6 cloves garlic
2 large sweet white onions or red onions (approx 1 1/2 lbs)
3 cups water
2 (6 1/2 ounce) packages Fantastic Foods vegetarian chili mix
2 (19 ounce) cans red kidney beans
1 (13 ounce) can hunts tomato paste
1 fresh red bell pepper, chopped
2 fresh carrots, chopped
1 stalk fresh celery, chopped
2 (10 ounce) cans sliced mushrooms (or equivalent amount of fresh mushrooms)
1 can crushed tomatoes (or equivalent amount of fresh tomato)
2 tablespoons chili powder (or to taste)
1/2 teaspoon ground cumin (or to taste)
2 teaspoons Tabasco sauce (or to taste)
1 teaspoon paprika (or to taste)
1 teaspoon cayenne pepper (or to taste)
1 tablespoon black pepper (or to taste)
salt (to taste)
Mince or pulverize garlic.
Chop onions.
Chop half of the onion into small (1 cm by 1 cm) square pieces.
Chop the other half into strips (1/2 cm by 8 cm).
This is so you get aesthetically pleasing"strips" of onion in the chili.
Chop the other fresh vegetables into small pieces.
Saute (covered) the onions, garlic and carrots on medium heat for about three minutes.
Add the remaining vegetables and continue to saute until the onions are just starting to soften, but before they become soft (about five minutes).
Add the water and the Vegetarian Chili Mix (entire boxes) and the beans.
Bring to a boil.
Add canned vegetables and tomato paste.
Add spices to taste and stir thoroughly.
Simmer on very low heat for at least 25 minutes, stirring occassionally.
Let cool to warm before serving.
Tastes best if re-heated.
Serve with grated"sharp" cheddar cheese and generously buttered bread.
3. Fish Tacos
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro
1 package taco seasoning mix, divided
1 lb cod or white fish fillets, cut into 1 inch pieces (about 4)
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 (12 count) package taco shells, warmed or flour tortillas
Toppings
shredded cabbage
chopped tomatoes
lime juice
taco sauce
Combine sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl.
Combine fish, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet.
Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until cod flakes easily when tested with a fork.
Fill taco shells with fish mixture.
Top with toppings.
It would be a complete overhaul you know. Because there is just as much "fast food" and "junk food" that is vegetarian. Simply going vegetarian doesn't equate to being healthy. It's better. Hands down. But if you really want to eat better, you're going to have to work at it.
Get some book. Not only are the recipes fun and exciting, but when you're feeling down they can be very uplifting. I'm always talking about Sarah Kramer's books here. Pretty soon, she's going to have to start paying me as her publicist.
I'm guessing you eat a lot of fast foods because you're on the go. So you'll need to start by getting a lunch box. Laptop Lunches are the best!
Begin with the very basics.
Learn how to cook rice. It helps if you have a rice cooker. You can get a cheapo one at Target to start with. Use whole grain unprocessed rice. Look for Lundberg. They're really good. Sustainably grown and YUMMY!
Look into healthier condiments for your food. Soy sauce. Tamari. Vegennaise. Miso Mayo. Soy Vey. Spike or all natural sea salt.
Experiment with nuts. Find what you like and what you don't. Skip the "conventional" roasted salted nuts. Go for unconventional. Mmmmm, chili and lime pine nuts that I baked in my own oven go just FANTASTIC on basic greens.
Go hog wild with the fruits and veggies. PLAY! Buy veggies you've never eaten before. Like Dinosaur Kale. Try it steamed one day. Try it sauted the next. Try it roasted with garlic on another day.
eat lots of fresh fruit and veggs, eat them raw
make juice of it
i'm not going to make you a meal plan
but if you eat the following food, you'll be ok
banana
apple
tomato
avocado
carrots
celery
sunflowerseeds
pumpkin seeds
peanuts
tofu
