Mixed Fruit and Spring Greens with White Chocolate-Orange Vinaigrette



Salad:
1 (15-ounce) can Mandarin oranges
5 ounces pre-washed spring greens
2 cups fresh strawberries, quartered
1/2 pint blueberries
Dressing:
1/4 cup Champagne wine vinegar
1/3 cup reserved Mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips
3 tablespoons olive oil


Drain Mandarin oranges and reserve juice. In a large bowl, combine salad greens and fruit. Set aside.
To make the dressing, in a small saucepan over medium-low heat, combine vinegar, 1/3 cup reserved Mandarin juice, salt, and sugar. Gently heat until sugar is dissolved. Remove from heat. Stir in white chocolate until melted. Set aside to cool. Do not refrigerate, as white chocolate will set.
Before serving, slowly whisk in olive oil. Spoon desired amount over salad and toss. Serve remaining dressing on side.

Well i used to bring meat in, just like from the fridge, and stuck a little cooler in, or a frozen water bottle works fine as a cooler. Also a apple maybe, cheese, salad and put dressing in a small tupperware, a bagel and bring one of those cream cheeses, for desert or watever they have these really good oreo things, and you get a pack and its only 100 calories :]

I think the oreo things are called thin crisps they come in a box of six so it would last a week

love this sandwich, bread, any kind, little bit of mayo, salt and pepper, leaf lettuce, tomato, and red onion, and a slice of cheese if you want.

You could try a veggie wrap. Also, you could make sandwiches.

Pitas are my favorite. I stuff them with different things every day.

Whole Wheat pita.

Avocado, hummus and sprouts
or
Sundried tomato pesto and Red leaf lettuce,
or
Steamed red kale, hummus and sprouts
or
Grilled veggies, hummus and sprouts
or
Grilled Veggies and sundried tomato pesto
or
Baked tofu and sundried tomato pesto
or
Grilled Seitan, Soy Vey teriyaki sauce and sprouts

Mix and match what ever you like. Sprinkle with 1 or 2 teaspoons of Nutritional Yeast and/or Spike seasoning.

I grow my own sprouts. I buy seeds from Mumm's or Sprout People on line. Mumm's is cheaper but Sprout People has yummy blends.

I also sprinkle nuts in the hummus often. Pine nuts are good.

These are what I make for lunches. These can go in a zip lock bag or a tupperware container.
Carrots with dip, broccoli with peanut butter, apples with cheese (real cheese or soy, no cheese food), PB & J sandwiches, Grapes, Dried fruits (apples, appricots, banana chips, ect.) A fruit cup, applesauce cup, yogurt, pretzels, hard boiled eggs, cheese sticks, Juice boxes, soy milk boxes, veggie dogs, pita chips and hummus, granola bars, fruit salad and pasta salad.

get a bag of rotini (curly spiral) pasta...i usually get rainbow..

chop up a red/green pepper...olives...cucumber

get a bottle of zesty italian dressing...

cook up the pasta so its still a little firm..rinse in cool water..add veggies and italian dressing and cover with lots of shredded parmesean...

make a lot cause its goood for days
