Three Bean Eggplant?
Does anyone know a recipe called this? When I had it it was eggplant rolls with beans inside and tomato sauce on top...

Three Bean, Tomato and Eggplant Salad
Ingredients:
2 tins of mixed beans (kidney, black-eyed beans, chick peas etc.)
1 large eggplant
2 tbsp olive oil
2 medium tomatoes (or 4 smaller red and yellow tomatoes)
1 medium red Spanish onion, sliced
Dressing:
2 tbsp balsamic vinegar
1/4 cup oil
grated lemon rind to taste
juice of half a lemon
2 tbsp chopped fresh mint
Directions
Drain beans into a colander and rinse thoroughly.
Cut eggplant into 2 cm pieces; place in a bowl and toss with oil.
Place eggplant in single layer on oven tray, bake, uncovered, in hot oven 20 minutes.
Turn occasionally; remove from oven and allow to cool.
Combine beans, eggplant, tomatoes and onion in bowl, add dressing; mix well.
basically just grill an eggplant in slices brushed with olive oil, heat up a can of beans (black, red, garbanzo...) and roll the grilled eggplant around the beans, then pour on tomato sauce you can make your own or buy a jar
