Answers:
TACOS!!!
*Yives Ground "beef" (found in the refrigerated section near the vegetables) If you cannot find YIVES, another brand will do... theirs can usually be found in the freezer section
*Ortega (or other) taco seasoning
*soft or hard taco shells
*lettuce & tomato etc.
*taco sauce
All vegan! I was a vegetarian for several years and didn't know it was possible to have a taco. Then I met a vegan (who became my boyfriend) who made these for me because I missed tacos. Tastes like the real thing but better for you.

Garlic Pasta
*Use the same ground
*Make pasta using butter and garlic for the sauce
*add mushrooms and garlic sauce
*spinach is also good for this dish
~~~~~~~~~~
Need a burger?
*Use Yives or Gardenburger, All-American burger
*Season with garlic salt, onion powder, pepper, some nutritional yeast (optional, but provides flavor and B12)
*Tofutti *cheese*
*barbecue sauce and/or Veganaise, fake mayonnaise
*perhaps grill some onions and/or jalapenos if you like spice
p.s. Because you are not vegan, you can of course use regular cheese and mayo and not disrupt her delicious dinner
Make dishes you usually make, but take out the animal
Morning Star Farms has vegan chicken and beef strips, which are excellent in many dishes. My mom is a meat-eater and uses these because they are healthier and she is on the Nutrisystem diet.
Buffalo and Barbecue *chicken* and tofu is great!
Tofu- is honestly delicious. I understand how difficult this could be for you. I grew up in a very meat-eating household. I became vegetarian for my own moral reasons, but really liked the taste of meat. These types of dishes helped me during times I thought I would fail.
Tofu is wonderful in Chinese dishes.
Eating out_
Many Chinese places have vegetarian/vegan options
Indian- Great places for vegans
Mexican- Food for both, but call ahead and make sure their beans do not contain pork fat.
Pizza- Papa John's in fine by PETA, Pizza hut is not. She can have a white pizza with garlic sauce too.
Here is some info to help you realize how bountiful a vegan lifestyle can be.
Many recipes can be made vegan. Dining out might be a little trickier - you might let her choose a restaurant, if you're going out.
For starters:
- Pick up a few salad dressings that are vegan (some Italian dressings and vinaigrettes are very good and vegan).
- Pick up vegetable boullion or broth, to use instead of chicken-based broths.
For recipes, you might want to check out www.fatfree.com. Not all of the recipes are vegan, but many are easily convertible.
For cookbooks, cruise the local library and see what they have to offer. Bryanna Clark Grogan has a number of good cookbooks (I especially like "20 Minutes To Dinner"). The McDougall Plan cookbooks are also very good, and some are very easy if you substitute low-sodium canned goods when needed. Your library should have more information on these.
Vegan cooking can be a lot of fun, especially if you like experimenting with food. I'm not a vegetarian, but I love cooking veggie meals once in a while. :)
You should check out these books Garden of Vegan and How it All Vegan. I have tried the recipes they are easy and taste great too.
Heres a mock meatloaf
1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper
Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg
Saute the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 F for 30 minutes.
Meanwhile, mix together the ingredients for the coating and set aside.
Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.
Creamy Mashed Poatos
5 large potatoes, diced
1 cup liquid nondairy creamer (try Silk brand)
2 Tbsp. margarine
1/4 cup fresh chives, chopped
Salt and pepper, to taste
Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
Banana Muffins
3 ripe bananas
1/4 cup oil or melted margarine or Vegan Butter
1 cup sugar vegan
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped walnuts
Mash bananas (overripe ones make the best bread). Add oil/margarine and sugar. Mix well.
Sift the flour, salt, and baking soda together and add to the banana mixture. Mix until the flour is blended (do not beat).
Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.
Try going to vegweb.com. They have a huge amount of easily searchable recipes with reviews and user suggestions. Good luck...I think what you're doing is great.
If you decide to dine out, check out the restaurants listed on VegDining.com for your area.
Becoming Vegan by Vesanto Melina is also a big help. It has a website, too.
You can try contacting the Vegetarian Resource Group for a free e-newsletter. They have many good recipes on their magazine and which they send out to members through email.
Good luck!
You may find some good recipes on here, I hope you find something that you enjoy.
Awesome! I'm going Vegan for lent. You should hit me up if she would want to talk, as it would be great to feel like I was doing this with someone!
Last time I was vegan for lent my boyfriend made me an awesome V-day dinner. Lots of veggies marinanted in an italian dressing type sauce then grilled on the grill.
Awesome mashed potatoes can be made with potatoes, soy milk, vegan butter, and a little brags amino acids.
I'm giving up sugar as well, but with vegan butter and egg replacer you can make some awesome brownies/cookies!
To cook for her:
Salads (pack on the veggies). I find Italian dressing and balsamic vinagerette are vegan
You can make her spaghetti with that, be careful w. the spaghetti sauce, check the back to make sure theres not cheese.
Maybe breadsticks? Theres frozen breadstix you can get that are vegan. I forgot the brand. Just check the labels!
Maybe some soup, Vegetable broth, add in vegetables, beans, I like adding in shell pasta.
If you dine out I find mexican places are the easiest, replace your meat with beans, just make sure they're vegetarian, some refried beans have lard in them.
Also chinese places, Vegetable lo mein and Vegetable fried rice. You might just want to confirm it with the cook.
Papa Johns & Godfathers (not sure if you have those where you live) pizzas are vegan when you get them w.o cheese. It might sound weird to you but its actually good. Pack on the veggies. That garlic butter sauce at Papa Johns is vegan. It's very good.
Taco bell is easy to eat at. Their mild sauce is vegan. I always get a bean burrito minus the cheese.
Burger king- The french fries are vegan. You can get a whopper w.o meat, cheese, and mayo.
Those are just some ideas if you guys wanna go out to eat!:D
