Do you know of a good homemade substitute for mayo?!

Do you know of a good homemade substitute for mayo?

I am allergic to wheat (flour) eggs, soy. I have tried substituting yogurt, sour cream, cream cheese, etc. but cannot get the consistancy and flavor I want. I would love some ideas.

Hi Beebs! Check out the product linked below. With the Ener-G egg replacer you can make a pretty decent mayo substitute for sandwiches and whatnot. If you use rice milk and have Xanthan gum you can thicken the rice milk with Xanthan and add a dash of lemon juice for the tartness. You can also make non-soy tofu from white beans like navy or great northern beans! If you make your non-soy curd using lemon juice as the coagulant the end product is very similar to mayo and works well in recipes that call for mayo. If you'd like details on how to do any of these just ask me!

use mustard instead, yummy

ranch dressing.( sorry, I checked it has eggs in it!)
*Tofu mixed with in with the other things to give you the consistancy you want

Mayonnaise (for use in salads and salad dressings)
Amount: 1 cup
Substitute:
- 1 cup sour cream
- 1 cup yogurt
- 1 cup cottage cheese pureed in a blender
- Or use any of the above for part of the mayonnaise

Eggless Mayonnaise Substitute

480ml/16fl.oz. Lightly salted Water
225g/8oz Soft Tofu
2 tbsp Lemon Juice
1/4 teasp Salt

Instructions
1. Bring the salted water to the boil, add the tofu and bring back to the boil.
2. Immediately remove from the heat and leave for 3 minutes.
3. Drain the partially cooked tofu and place it in a food processor together with the lemon juice and salt. Process until smooth.
Refrigerate until ready to use. Do not re-cook.

Well, if you can't have soy I am out of ideas. How about substituting EVOO?
