I want to make CRISP zucchini slices in the oven!?
Can anyone tell me how to make zucchini in the oven without it turning to mush? I want crisp pieces.
Every "roasted veggie" recipe I see online calls for 450F for 30-40 min. I did that the other day and the zukes were way over cooked and turned to a watery mush.

If you want them crispy, you'll need to cook them in a pan on the stove top. Just a few minutes with oil for a tender-crisp veggie.
If you want them in the oven, you may be thinking of a deep-fried zucchini type thing, (like you can get from pizza shops) and the outside only would be crispy. You'll need bread crumbs, beaten egg, and a little Parmesan cheese. Cut the zucchini into thin strips or chips, dip in the egg, and dip into the breadcrumb/cheese mixture. Place on an oiled baking sheet, and bake until brown.
Yum! (I would dip them in a mayo/horseradish sauce...mmmm)
edit - On the stove, any kind of oil will work. Vegetable, olive, peanut oil might give it a nice flavor. If you wait until the oil is hot, you can cook them faster. If you put them in the cold pan, they will get soggy. Keep in mind it is hard to do. Zucchini is a little soft to begin with. Trial and error will make them to your liking.
the best way to make crisp zuccini slices would be in convection oven or dehydrator machine.
in regular oven, no matter at the lowest temp you will cook it instead making it chips ^_^
