I also eat fruit, veggies, beans, brown rice, lots of whole grains and whole grain products, lugumes, many varieties of salads, soups, and stews. I have been a vegetarian since 5 and my mom makes the best cooking ever but I don't know the recipes by heart. Besides her cooking I like vegetarain chili, pasta(alfrdo is good....yum), salad, sandwich(if you like tofu, than pick a healthy bread get tofu-I like the tofu with a spread and the you got a healthy sandwich-buy at health food store), and the grociers as excellent meat substitiues
have you ever tried veggetarian lasagna? or vegetarian hawaiian haystacks? those are both delicious meals! for the vegetarian hawaiian haystacks, the rice has to be moist enough or it'll be gross, and you just put on the other toppings and skip the meat sauce. I do it all the time when my school is serving hawaiian haystacks as a choice that day
