There are tons of vegetarian foods out there that people don't think about. Just because it's not specifically made vegetarian doesn't mean you can't eat it. I would suggest (for right now) some macaroni and cheese. It's filling and it's not meat. When you have a chance to go to the store try filling your cart with fresh fruits and vegetables. Pretzels and popcorn are always good snacks during the day. I recommend all Morningstar products in the frozen food section. They are found in a green box. With your fresh vegetables and Morningstar chik strips make a vegetable stir fry.
Almost everything that is originally made with meat can be substituted with vegetarian ingredients. Try quesadillas with chik or "beef" strips. Hummus and peta are great. Just think of something you like and make it with tofu or fake chicken/beef.
I hope that helped! It's though in the beginning but the overally benifits are amazing and you feel alot better about yourself!
do the best you can. Consider it a process. There is always Taco Bell , veggie subs at sub places, veggie pizza (if not a vegan), fake meats made of soy at frozen foods in grocery, soy milk in grocery or health food store....here is a good recipe.. I don't use the picquante sauce or kitchen bouquet in it tho...
VEGAN CHILI RECIPE:
Ingredients:
olive oil
2 large yellow onions, diced
2 cloves garlic, minced
1 red pepper, diced fairly large
1 green pepper, diced fairly large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup ground carrots
1/2 cup ground celery
5 mushrooms cut into quarters
1 package frozen corn
2 cans black beans (or any other kind of beans you like - chickpeas work well, too)
1 1/2 cup picante sauce
1 t. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired
Directions:
Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.
Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.
Serve with grated cheddar and cashew nuts, if desired.

Morningstar makes delicious vegetarian substitutes. The chicken patties are better than the real thing, the "meat" crumbles are great as sloppy joes and in chili and spaghetti sauce, and the "sausage" patties are good. Maybe you shouldn't go vegetarian "cold turkey" (pardon the pun), try phasing out meat over a couple of weeks, maybe start with one meatless meal a day, then maybe go meatless every other day and so on... Don't give up yet.
quick and easy.
Get fried tofu or veggie chicken strips and your favorite Asian spice mix packet. I use Kung Pao. follow directions on back of packet. If you can cook 1/2 as good as I can you will have awesome Kung Pao chk'n.
