Question:

What can be used to replace eggs in cake and other disdhes?

What about things like suger?

Hello
You can use 1/4 cup unsweetened applesauce per 1 egg.
You can also use 2 tbsp corn starch per 1 egg. If it is a bit dry, you can simply add a bit of water or oil until it is the consistency you want.

Honestly, I have found that most chocolate chip cookies do not even need eggs. I add water for consistency and end up with great cookies.

ps. 1 banana = 1 egg for cakes, but you can also use the corn starch

:)

Here is a link to some other interesting alternatives.
It covers baking, casseroles and even *scrambled eggs.*

And that is how I bake without eggs.

:) yum

i guess you can use eggbeaters- as for sugar- if you just want to subsitute... sweet and low

egg substitute

you can use apple mouse

"Although the good news is that just about any recipe that calls for eggs can be made vegan by using the proper egg substitute, there's no single answer to what the best substitute will be. Eggs perform a different function, depending on what you're making, so you may also need a different egg substitute, depending on the dish. "

Check the link for a full list of what can be used for what type of recipes. It also includes some "egg-free" recipes.

All sugar and egg substitiues are highly processed, many are toxic (like sweet and low) and are just *junk*.

For baking, 1 Tbsp whole yogurt can be subbed for 1 egg. Buttermilk works great too as an egg sub, 1Tbsp for 1 egg. If its for vegan recipies, I have actually made wonderful cakes without any eggs or egg subs!! You can use malt as a binder and a little bit extra baking soda will make a very light cake!

As for sugar, ALL sugar substitutes are highly toxic and should be avoided! Whole maple syrup, rapadura, honey(if you arnt vegan) and agave syrup can be used everywhere you would normally use sugar, most in the same amounts too. Dried stevia leaves are 300 times more sweet than sugar (go figure!!) and can be easily incorperated into cooking.

1 egg = 2 tablespoons liquid + 2 tablespoons flour + ? tablespoon shortening + ? teaspoon baking powder

OR cornstarch (Substitute 1 tablespoon cornstarch plus 3 tablespoons water for each egg called for in recipe.

OR mayonnaise (Substitute 3 tablespoons mayonnaise for each egg called for in recipe.)

OR bananas (Substitute 1/2 of a mashed ripe banana plus 1/4 teaspoon baking powder for each egg.)

egg substitue is best for eggs.
splenda, sweet & low, equal or good for sugar but be sure to check to see how much, it's on the box.

There's a product called Ener-G. It's a powdered egg replacer you can use in baking. You could substitute white sugar {white cane sugar is filtered using the charcoal of burned animal bones} with turbinado sugar (brown colored sugar with some molasses still in it).

Depending on the recipe, you can use a number of things. For pancakes and waffels, I like to use bananas. For muffins and cookies, I use applesauce. In other recipes, you need to use Ener-G Egg Replace (check the Natural foods section in your grocery store).

As for sugar, I'm not too sure. Someone mentioned sweet and low, that might be an idea, or use Splenda.

You can use soy flour. It acts as a binding agent like eggs. You will have to search the web to find the correct quantities.

Check out www.theppk.com-- and the book "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz and Terry Hope Romero. Their website and book are awesome, and have tons of recipes for yummy egg and dairy free cakes and sweets.
About sugar...well...if you don't mind using chemicals in your food, Splenda for baking works ok, but the texture suffers. If you want to avoid processed sugar, raw sugar, brown rice syrup and agave nectar work quite well.
