The answer lies in the question.
Vegans call themselves Vegans
Vegetarians - Vegetarians
Fish and meat eaters (same group) are either carnivores or omnivores.

omnivores, there isn't a word in the english language for a diet that is varied to include meat as well as fish, dairy products, wheat products, fruit, etc.

DIET. If you look up the word, you'll see that it does not just mean weight loss. It means any way that a person eats. So you can group all the above under the title diet preferences.

The word is either omnivore or diet.
Diet refers to the kind of food a person or animal lives on.
Then, you can make subcategories to specify a certain group of food only is eaten. There, you can include, vegetarians, veggans, carnivores, etc.
The definition for Diet is:
a- Diet (nutrition), the sum of the food consumed by an organism or group. - thresaurus
b- A food consumption pattern -
c- controlled intake of food: a controlled intake of food and drink designed for weight loss, for health or religious reasons, or to control or improve a medical condition
a wheat-free diet
regular intake of something
(Encarta)

Omnivore definition states that it is an animal feeding on both vegetable and animal substances. You could make subcategories here too.

Sounds like you have been having a bit too much good craic tonight, huh?
