beth's cafe is quite accomidating to vegetarians (dont ask for sprinkles though)
monst indian cuisine restaurants can easily accomidate vegetarians and vegans
thai places are good also

I'd guess that virtually EVERY city in the US has a vegetarian friendly restaurant. Your best bet on Y!A would be to post a question like "What are some good Vegetarian Friendly restaurants in XXXX" in the Dining Out or Vegetarian section.
