My office has a yearly Chili Cook-off. Now I won last year with my Beer Can Chili and yes sorry it had meat. This year I want to shake things up and do a Veggie Chili. Does anyone have a good recipe without tofu? While I love tofu most of my co-workers are afraid of it for some reason.

VEGAN CHILI RECIPE:
Ingredients:
olive oil
2 large yellow onions, diced
2 cloves garlic, minced
1 red pepper, diced fairly large
1 green pepper, diced fairly large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup ground carrots
1/2 cup ground celery
5 mushrooms cut into quarters
1 package frozen corn
2 cans black beans (or any other kind of beans you like - chickpeas work well, too)
1 1/2 cup picante sauce
1 t. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired

Directions:

Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.

Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.

Serve with grated cheddar and cashew nuts, if desired.

Could you alter your beer can recipe to omit the meat? Use Morningstar or Quorn crumblers instead?

There are some good chili recipes on www.allrecipes.com under the vegetarian section. I made one for a potluck last year and it was liked by most. I'd suggest "spicing it up" if it's for a chili cook-off though.

Use TVP and don't tell them it is soy based. It will have the taste and texture of ground meat with chili seasonings. Or just make chili without meat. Use beans (pinto, kidney & black), tomatoes, corn, diced green chiles, carrots (shredded), cilantro, bell peppers, onion.

try using portabello mushrooms instead of meat, and everything else the same

the key is grill seasoning and Morningstar fake hamburger meat. it will really add to the texture, and adopt all the flavors you put in. really slowly cook your onions at the beginning to bring out all the sweetness and flavor. splash some beer in to add a depth of flavor. then add garlic, bell peppers, jalepenos and cook down for a bit. add canned beans and crushed tomatoes and tomato paste. Add a bit of good low salt vegetable broth to add depth of flavor. throughout the cooking process add your spices (i like to add a dash of cinnamon to keep em guessing) at 3 different times - once when you first add all the veggies, once after 1 our of cooking, and once 30 min before serving. Add the veggie meat (found in the freezer section) 30 min before serving too.

Top with cilantro and smoked cheese (like gouda!) to add to the flavor.

i made chili the other night that was pretty good - just used black eyed peas, lentils, navy beans, kidney beans. and then made chili like normal.

I made veggie chili using a recipe on the back of the Morningstar brand veggie chilli. I mixed it with Mcormick's (I think) chilli seasoning. I loved it. My carnivore friends loved it as well.

Use the Boca or morningstar farms crumbles or just make a bean chili.
