Vegan macaroni and cheese
You will need to have three pots bubbling away on the top of the stove

First pot: Pasta
2 cups uncooked macaroni
water

Bring water to a boil.
Add pasta.
Cook until done.
Drain.
Second pot: White sauce
1/4 cup vegan margarine
1/4 cup flour
1/2 tsp salt
2 cups vegan soydrink

Combine margarine, flour, and salt over low heat.
When it bubbles, gradually add the soydrink.
Cook and stir until it is thick and begins to bubble.
Remove from heat and add the "cheese" from the third pot.
Third pot: "Cheese"
1/4 cup "good tasting" nutritional yeast
1/4 cup cornstarch
1 Tbsp flour
1/2 tsp salt
1 cup water
2 Tbsp oil
1/2 tsp Dijon mustard

Mix nutritional yeast, cornstarch, flour, and salt in a small saucepan.
Add water, oil, and mustard.
Cook and stir until it thickens and bubbles.
Add it to the white sauce from the second pot.
Putting it together
cracker crumbs or bread crumbs

Preheat oven to 375 F.
Mix cooked pasta with "cheese" sauce.
Pour into a greased casserole dish.
Top with cracker crumbs or bread crumbs.
Bake for 30 minutes.

I'm assuming you want to be completely milk and cheese free?

You could use soy milk and soy cheese.

IT CAN'T BE DONE

What's the point? Anyone who had ever tasted the real thing would know the difference right away.

I'd say, boil up your macaroni, put some vegetable shortening and salt on it, and call it done.

Macaroni and Cheese
Pasta - Pasta - cheese - -

INGREDIENTS

4 cups elbow macaroni
1/2 cup olive oil
1/2 cup whole wheat flour
4 cups boiling water
1 teaspoon sea salt
1 1/2 teaspoons garlic powder
A dash of turmeric
2 tablespoons tamari
1 cup nutritional yeast
A sprinkle of paprika

METHOD
Cook the pasta in plenty of boiling water and drain.
In a pot, heat the olive oil and whisk in flour. Whip in the boiling water, sea salt, garlic powder and turmeric. Then whip in the yeast (large flakes are best).

Mix most of the topping with the macaroni in a bowl. Place the mixture in a casserole and top with the remaining creamy sauce. Sprinkle with paprika. Bake at 15 minutes at 180C/350F in a pre-heated oven.

Broil 2 minutes to brown the top after baking.
