Idea's for gluten free veggie!?

I have been veggie for most of my life(33yrs). I had to go on a gluten free diet 4years ago and need some new ideas for meals.Any help will beappreciated.

I have a friend who has a gluten allergy and last time she came over I made sushi.

If you don't eat fish either you could make veggie sushi with red peppers and cucumber etc.

I am gluten free too, and know how hard it can be! I am also allergic to soy and eggs. I found a terrific rice pasta at my health food store called Tinkyada. They make all kinds, including lasagna noodles, elbow mac, spirals and jumbo shells. I stuff the jumbo shells with spinach and cream cheese, or with mashed, seasoned potatos for pirogies. I have turned to ethnic cuising, because many cultures, such as el salvador, mexico, japan, etc do not use wheat as a staple. Try prowling the ethnic section on here and googling for other cuisines. You can email me if you like, I will be glad to share recipes with you. Also, I got some allergy cooking books from the library and have just started experimenting with xanthan gum, which is supposed to make breads more palatable. try a home made veggie curry with rice. make a nice potatoe and pasta (gluten free ofcourse) salad with lashings of mayonaise
