I'd recommend you obtain a copy of "The new Farm Vegetarian Cookbook" from Amazon or Abebooks.com. It has quite a few recipes for replacing dairy cheese. They even have a recipe to make a really good tofu based grilled cheese! And if you want nacho cheese you replace the liquid in the recipe with carrot juice (for color and sweetness) and add tomato, pepper, onion and cumin (sorry Mintee).

To simply add a cheesy flavor to food nutritional yeasts work well. I prefer the KAL and Bob's Red Mill brands for this (especially Bob's that is more costly but uses a strain unique to them). Parma! and Soymage both have damn good Parmesan replacements based on N.T. and the Parma! is soy free!

I've also given a list of links to recipes for making your own replacements (I've made most of them). The nut based ones at the last link are pretty good but are more costly to make (since they're based on nuts) but have a slight edge over the inexpensive Farm recipes in that they keep longer and more closely resemble cheese.

depends on the recipe..
if you are making grilled cheese sandwiches.. you cant substitute...
if you are making nachos with cheese sauce.. you cant substitute...
you didnt elaborate on what you are trying to make

Paneer (Cottage cheese)
Toffu (Soya bean curd)

Soy. It can be substitued for alot of things....but has an escpecially good texture for cheese.

The catch is..it takes on the taste of the ingredients.

So the texture will be there..but the taste depends on what else you add!

I could be here all day but I think you get the idea...

i was in walmart the other day in the veggie section and i saw veggie cheese..i am not a vegetarian by nature but decided to give the whole idea a try.. on a whim i brought the cheese and the bocca burger and morning star chicken and stuff.. pretty good and low in calories..
