What should I make for dinner tonight? (We are vegetarians.)?


Answers:
Grill, or oven roast an assortment of vegetables, such as zuchinni and / or yellow squash, onions, carrots, bell peppers, mushrooms, etc. Serve over rice or pasta, or top with melted cheese and serve in a sandwich or wrap.

depends, ovo-lacto? i'd make a stir fry with upu squash, if you can find it there.

Make the same thing you made last Sunday.

If your vegetarians then the only good stuff to eat is:

Cheese, chocolate and beer.

How about a chocolate quesadilla with beer!

i always go to the site below and they have hundres of free recipies and you can find many vegetarian dishes. I dont know what you like or how you cook so this would be your best bet to find something for tonight and for the rest of the week!!!

One meal I enjoy is "Beans and rice". It's filling and a whole protein.
If you serve a fruit salad with it some corn muffins and light dessert choc. pudding poured into parfait glasses with cool whip between spoonfuls...and some crumbled cookies on top.. it's a great healthy meal.

Beans and rice
1 cup rice will serve about 3 people. I usually use 2 cups water with one cup raw rice and a dash of salt and pat of butter. I bring the water to a boil and let it cook for 3 minutes then turn off the heat and leave it covered for about 25 minutes. Then fluff with a fork and serve.
Beans and rice:
saute 1 medium chopped onion, 2 cloves of minced garlic minced, 2 stalks of celery washed and chopped, you can buy a bag of frozen pepper strips for making all kinds of dishes I use these or buy fresh bell peppers, chop them and add to the pot covered with olive oil or canola oil. Saute in the oil the veggies and then add two cans of stewed tomatoes and two tablespoons tomato paste. I also buy a small can of green Chile's they are mild and add a nice flavor. you find them in the Mexican food isle. I buy cans of beans instead of soaking dry beans overnight. Normally I use red beans or kidney beans that I rinse and then add to the pot. It's up to you how many cans you think you need. Buy 4 and add two to start. Add more if you think you need to. chop some fresh parsley about a 1/2 cup...salt and pepper to taste..plus a tablespoon of Chile powder. stir everything together and add a cup of water if it's too thick. I also add some veggie bullion cube to the broth for extra flavor. Mix well and simmer for about 40 minutes until the flavors have time to mingle.

One other choice if you do not want to eat rice...you can make "polenta" it's cornmeal that is boiled in salted water and stirred constantly on low heat until thick like oatmeal....it's delicious with butter and Parmesan cheese.
