I have cooked beetroot, spinach and an olive anti-pasti....?
... in my frigde I want to use today. Any idea what I can do using them and some other ingredients. Veggie recipies though!

Probably the best way to use them up is in a pasta dish. (I assume the beetroot is not pickled!). Heat some olive oil in a pan with some garlic and maybe an onion, then add your leftovers to heat them through and toss with some cooked spaghetti. Beetroot has a nice earthy flavour and will go well with the garlic and spinach, and the olives will provide some interest. It'll be best with black olives but if yours are green then they'll be fine too. A bit of pesto would be nice too if you've got some. I'd have some mixed lettuce with a bit of vinaigrette with this.
put all the ingredients in a bowl and mix well. scrape the whole bowl into the bin and then have a good old steak and chips instead.
i personally would be lazy and order in a pizza or something ( i to am vegetarian lol ) but maybe make some sort of spinich omelette. Or else try a salad .
