5 Minute Thai Shrimp Satay
4 servings
1 lb shrimp, peeled and de-veined
1/4 cup low-fat peanut butter
1/3 cup low-fat catalina dressing or low-fat russian dressing
1 tablespoon water
1 tablespoon reduced sodium soy sauce
dried chili powder (optional)
Thread shrimp onto skewers.
Mix peanut butter, salad dressing until smooth.
Stir in water and soy sauce.
Brush 1/2 of sauce on shrimp.
Grill or broil for about 3-5 minutes or until shrimp becomes opaque.
Serve with remaining sauce for dipping.
NOTE: If using wooden skewers be sure to soak for 1 hour beforehand.

Steamed Ginger Chicken and Snow Peas
2-3 servings 15 min 5 min prep
2 boneless chicken breasts
2 tablespoons Italian dressing
8 ounces snow peas
1/2 cup water
1/2 teaspoon salt
1 small gingerroot
1 large scallion
1 lemon, quartered
dried red pepper flakes
Chicken Breasts One-Dish Meal
Cut chicken into 3 in x 1/2 in strips.
Marinate the chicken in Italian dressing while you trim the snow peas.
In a 12-inch skillet, boil the water with 1/2 teaspoon salt and 3-4 quarter-sized slices of ginger over high heat.
Add the chicken, lower the heat to medium, cover, and simmer for 5 minutes.
Place the snow peas over chicken in the skillet, cover again, and simmer approximately 2 minutes so that snow peas are cooked but still crunchy.
Serve over cooked white rice, garnishing each portion with scallion. Serve with lemon wedges and red pepper flakes to taste.
Raisin & Walnut Rice Salad
100g snow peas, topped, tailed & sliced diagonally
3 cups cooked brown rice
1 small red onion, finely chopped
1 small capsicum , finely chopped
1 red apple, finely chopped
1 cup chopped raisins
1/3 cup chopped walnuts
Dressing
3 tbsp light olive oil
2 tbsp white vinegar
2 tsp curry powder
1 tsp brown sugar
Blanch snow peas by pouring boiling over them and standing for a few minutes. Drain them and chill with cold water. Drain again. Combine cold rice with snow peas, onion, capsicum, apple, raisins and walnuts. Combine dressing ingredients and toss through rice mixture.
This salad can be refrigerated for up to 2 days.
Chickpea & Risoni Soup
1 tablespoon olive oil
1 leek, thinly sliced
1 zucchini, sliced
1 medium potato, sliced
2 medium carrots, sliced
2 sticks celery, sliced
125g green beans, cut into 2cm lengths
1 teaspoon dried oregano
810g can crushed tomatoes
4 cups vegetable stock
425g can chickpeas
? cup risoni
Heat oil in a large saucepan. Add vegetables and sauté. Add oregano. Add tomatoes and stock. Bring to boil, then reduce heat and simmer for 20 minutes. stir through chickpeas and risoni. Simmer a further 10 minutes.
