Question:

I'm looking for a sweetener that I can't remember the name of?

It's not sugar, Nutra-sweet, or any of the commercially well-known sweeteners. I had cream cheese frosting made out of it once but can't remember what it was called. It was something healthier than sugar. Also, do you know what would take the consistency of cream cheese but not be dairy based?


Answers:
Could the sweetener be Sucanat (dark brown in color, grainy texture), or perhaps stevia (from the stevia plant, which ounce for ounce is many times sweeter than sugar)?

You can find vegan "cream cheese" at specialty and natural grocers, and I believe it is soy based. You could also try using a sour cream substitute, or plain soy yogurt that is drained through a cheesecloth (to produce a cream-cheese-like texture).

The sweetner may be stevia or agave nectar. Stevia is taken from the stevia plant, while agave nectar is from the agave plant. Stevia has the upside of being calorie-free. Agave nectar is low on the glycemic index and is therefore nicer to your bloodstream than refined sugar or high fructose corn syrup.

For the cream cheese, it depends on what you're looking to do with it. Tofutti does make a product called Better Than Cream Cheese, which does replicate the consistency of cream cheese rather well. If it's for a dip or cheesecake, sometimes drained, pressed, pureed firm tofu will work instead.
