I am running out of ideas for what to make. I make alot of pastas and have made quiche and chili rellenos too. Please pass along some good recipes!

Tofu Fajitas are really good. Just put cubed tofu, red pepper, green pepper and onion in a skillet with a little bit of oil. Add either premixed "fajita seasoning" or make your own with salt, pepper, tequila, dry chipotle (careful if you don't want it to spicy) then fry it all up together. The tequila adds a really good flavor but its not a must if you don't want it in there. After its done cooking sqeeze some fresh lime over it. Serve with lettuce, cheese, tomatoes, sour cream, guacamole and salsa and of course rice and beans..just have a big pile of flour/corn tortillas hot and you'll have a GREAT meal!!! yummmmmmmmmmm
you can either plate it up with a little of each thing on each persons plate or just put it all in the middle of the table and share.
I often do rice when I am cooking for many people. Fry peppers, onions, egg, corn, tomatoes and that sort of thing in a frying pan, and then add the cooked rice and just stir for a few minutes. You can serve it with fish or something or even on it's own with soy sauce. It's really easy to make. For non-vegetarian, add cooked chicket filet pieces to the rice, and you have a full meal.

Peas and Cottage cheese curry (Matar Paneer).
Vegetable biryani and tomato onion Kuchumbar.
Puff pastry samosas, any filling of your choice.
Chickpea curry.
Baked gnocchi verdi with parmesan.
Roman semolina gnocchi, baked.
Fried eggplant slices, rolled and filled with provolone, sundried tomatoes and capers - baked.
Oven roast vegetables, crusty bread, spinach/cheese timballi.
Rotolo di pasta, green or red pesto sauce.
Pasta e fagioli, parmesan.
Zucchini frittata.
Caponatina.
Asparagus or celery au gratin.
Potatoes Dauphinoises.
Twice-baked potatoes with broccoli cheese.
Lentils /chickpeas/beans croquettes, and mint-yogurt dip.

look into Bulgar wheat and seitan, they are both meat substitutes. When cooked the Bulgar takes on the consistency of ground beef and the seitan has the consistency of chicken or beef. They both take on flavors very well. The seitan makes great grilled foods, its good in salads, and they make outstanding fajitas.
also for meat dishes that call for chunks or large pieces you can use big pieces of portabella mushroom.
This taste WONDERFUL!!! I think your guest would love it. It's a great asian take on an old favorite and it's not very expensive to make. It also pairs well with alot of dishes.

Broccoli Slaw Recipe
1 bag broccoli slaw salad (you will find this with the pre-packaged salad mixes at the grocery)
2 pkg. oriental ramen noodles dry
1 cup sunflower seeds (salted, no shells)
1 cup slivered almonds
1/4 cup butter
3-4 chopped green onions
Saute in butter the broken noodles, sunflower seeds and almonds until light brown
Let it cool completely.
Mix with slaw in bowl.
Dressing
Seasoning packets from the noodles
1/3 cup Hot Chili Sesame Oil (this is the biggest challenge to find, the brand I like the best is House of Tsang, my mom buys it in Oklahoma of all places and brings me a supply when she visits! Sometimes Whole Foods carries the hot chili sesame oil in another brand and it tastes fine, just do not try buying plain sesame oil and hot chili sauce and mixing, it does not work).
1/2 cup vegtable oil (Crisco)
1/2 cup sugar
1/3 cup white wine vinegar
Put on slaw before serving and mix well. I actually think that it sometimes tastes better the second day.
Soya Bean Soup.
3 onions, five cloves of garlic
5 carrots, 5 stalks of celery
One carton of chicken stock
6 cups of water
2 cans of tomatoes
oregano and basil
salt and pepper to taste
soya beans two cans.
