The key really though is in the presentation. Try to fix it the night before, so your not rushed. Ex: I could spoon rice in a microwavable bowl with the veggies, rush to work, then here's lunch, nuked rice with veggies...no so much yummy in my tummy. But if I scoop the favored rice in a bowl (favorite bowl, pretty, etc, whatever flip your lid), then arrange my veggies in diagonal rows across the rice....NOW that flips my tummy!

I never get bored of sandwiches ..I make vegan sausage and potatoes on Italian bread ... vegan chicken salad with lettuce on rye......sauteed peppers and cage free eggs on whole wheat ..veggie BLT's ... veggie burgers ..my goodness there is a ton .. but of course you can have many Indian foods not on sandwich ..or veggie tacos ..or rice dishes ..soups ...baked potatoes with broccoli ...tofu dishes ..today there are a lot of veggie/vegan foods ...all can be prepared in minutes ... go to any health food store or look on line for easy vegan/veggie recipes
Yes! A little bag of whole wheat crackers and some sort of dip made of chic peas and herbs or creamy white cheese and herbs and .... or some mashed cannellini with olive oil and herbs.... or even some dip made of green soy beans (the best!) and herbs and a little oil ...
Then a nice herb tea ... and something like dry fruit for dessert.
A pepper (cooked but still crunchy - oven or microwave) stuffed with cous cous, served with mushrooms. (I hate the mushrooms but the rest of it is nice!)
Boiled potatoes and sliced onion layered with cheese in casserole dish, some knobs of butter (optional), topped with sliced tomatoes and baked in the oven for 20 minutes or so. Good idea to grease the dish first.
Chunky veg roasted in olive oil with herbs and rice.
Felafel and salad in a pitta pocket, always does it for me.
Usually i take leftovers from dinner. That is the easiest. But, if I am out of leftovers, and need something fast and good, I put a little instant rice or couscous in the bottom of a tupperwear, then put whatever frozen veggies I have on top of that, and then add a little fake butter stuff or olive oil, and lots of s&p. Then when I get to work, I can throw the whole thing in the micro and it is read in three minutes.

Greek Salad - feta cheese, olives, peppers, cucumber, lettuce, red onion.

If you have a thermos or soup container, I make this a lot. You can make it in the morning or the nite before and microwave it, it only takes about five minutes to make.
One can unsweetened coconut milk(although in a pinch I have used soymilk and add unsweetened coconut flakes if I have them)
Firm tofu, cut into cubes
Red Curry paste
Bamboo shoots
Straw mushrooms(skip if you dislike mushrooms! : )
Place all ingredients into pot, stir thouroughly over medium heat. Add anything else you really like, some people add Ginger root or Galanga root. Like I said, this takes only about five minutes and is so simple but such an exotic treat for lunch.
