The best vegan breakfast! IMO?
Hey everyone I'm not a vegan but I was curious to try Amy's Tofu Scramble with hash brown and veggies. It's completly vegan and delicious! The only thing I don't like about it is the tomato, it became quite soggy but I also cooked it in the microwave. The hash browns are lovely. If any of you have tried it what do you think of it?

Annie: I actually do take out the tomatos HA HA, yeah I think next time I'll try cooking it in the oven and see how the tomatos come out.

The microwave? I lived in the States once, and I used to eat this. I cooked it in a frying pan. It wasn't the least bit soggy. You need a lot of dry heat to evaporate the extra water in the tomatoes.
i agree with you. it's very nice --- minus the tomatos. i pick them out when i have it (i've only had it twice, but i liked it) i think you shuld do that too. it's a bit of a pain, and it makes a mess of things, so if you're slightly ocd about things like messyness i wouldn't suggest it, but it's just the way i do things :}
Use sun dried tomatoes. Soak them , then add them toward the end
I really like Van's Organic blueberry waffles..completely vegan and you would not even know it. I slather some Earth Balance on it and maple syrup.
