How to store fresh ginger?

How do you properly store fresh ginger? I am currently storing it in the produce drawer of my fridge, uncovered. It seems to dry out and get mold on it very quickly. Thanks.

the best thing to do is to use it quickly. ginger can keep in room temp for a while. use one of those breathable vegetable bags for storing in the fridge. don't freeze it, freezing ruins the taste completely.

Fresh ginger should be stored in a paper bag in the vegetable crisper of the refrigerator, where it will keep for weeks. If you need to keep it longer, you can break it apart, peel the pieces, and store them covered in a jar of sherry.

Store in a plastic pouch with some holes and put in the fridge but not covered by other vegetables. There is no harm if it somewhat dries.

If you want to grate it for use, the best thing to do is to store it in an airtight wrapping (this could be resealable plastic bag) in the freezer. That way, when you grate it, you very easily get a fine, almost powdery product, with all of the flavor of ginger. Then put the rest back in the freezer.

I picked up that trick on the Food Network, from a professional chef cooking at home. When I'm getting low on ginger, I look for the freshest ginger that I can find, in as large an amount as I want. I take it home, break it into smaller pieces and keep it as described above. It works every time.

If you want to be able to use it sliced, then keep it on the door of your fridge, uncovered, but only but a bit at a time, as it will dry out.

You can store fresh ginger by putting it in a jar and covering it with sherry. It will stay fresh indefinitely.

Another vote for the freezer... that's where I keep mine. Love having it available any time.

I usually grate it with a microplane grater after cutting a bit of outer skin off at the end where I want to grate.

I keep fresh ginger in double wrapped plastic foil and it remains fresh for even 2 months.

I always store it outside - stays fresh for long time without getting moldy.

We keep it in the freezer in a ziplock. That's it. Lasts forever.

I just keep it on the counter.

When it dries up you can still grate it into a powder and use it...cut off mold first of course.
