Vegetarian Breakfast Gravy?

I've been on the search for a vegetarian breakfast gravy. I'm not opposed to using cream... But, I'm in desperate need of some biscuits and gravy!! Anyone got anything?


Answers:
Buy a log of "Gimme Lean" sausage-style, chop it into dime-size pieces, and fry it in a little oil. Make a roux with flour and water, and add that to the cooked sausage pieces. Salt and pepper to taste, and serve this over biscuits. Take it from a girl who used to love Southern breakfasts--this is easy, cheap, and delicious!

Why not "basic white gravy recipe". They used it in the depression days because many could not afford meat.


Basic White Gravy
2 T butter or margarine
2 T flour
1/4 t salt
1/8 t pepper
1 cup milk

Melt butter in sauce pan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.

There a several things you can do with a basic white sauce. Here are a few of my favorites.

Country Biscuits and Gravy
1 recipe Basic White Sauce
course ground pepper
bulk sausage, browned

Serve over warm biscuits (see recipe below)

Cheese Sauce:
1 recipe Basic White Sauce
1/2 cup grated cheddar cheese
1/4 teaspoon dry mustard.

Add the grated cheese while the white sauce is still hot, but not on the burner. Stir until cheese is melted.

use powdered milk, skim milk or plain soy milk. Use any oil, butter that you are allowed add the flour as usual..

Whole Foods (grocery store) has a delicious white gravy that is vegetarian (I think it is vegan, too; it's pretty much just salt, other spices, and cornstarch).

Morning Star (veggie but not vegan) makes a great breakfast patty. I chopped one up and cooked it into the gravy then served it over biscuits. Mmmm...I am drooling just thinking about it!

Also, you can make your own gravy. There are different techniques, but the basic idea is brown up some flour or cornstarch in a vegetarian margarine. Add sea salt and spices to taste. Slowly pour in water (about 1/2 cup). Should be a little runny. When it bubbles, turn it down. It will thicken. Keep stirring.

I could show you but I do not have a recipe. Maybe someone else will post better directions.

Also, about half the time I am able to make low fat brown gravy -- Super White Trash Style:
Heat 1-1/2 cups water.
Add 1 packet from Oriental Style Ramen (veggie)
Slowly stir in 3 tbs flour or corn strach
Bring to light boil then turn off heat

Half the time it comes out as brown gravy. Half the time it comes out too lumpy. The secret is to keep stirring and add the flour slowly.

If you just want vegetarian, try milk gravy. You can get a million recipes on the internet. If you want vegan, just make regular gravy with mushrooms or vegetable broth.
