Ingredients:
-2 Cups Sooji lightly roasted
-2 cups Curds/buttermilk
-1 tsp Ginger paste
-5 Green chillies, ground to a paste
-1/2 tsp Chilli powder
-1 tsp Salt or to taste
-3/4 cup Water
-2 tsp salt

Method:

1) Heat pressure cooker with enough water in it.
2) Mix sooji, curds, ginger, chilli paste, salt and water to make a thick batter.
3) Mix in fruit salt and spread batter in a wet thali. Sprinkle chilli powder over it. Steam for about 10 to 12 minutes without weight*.
4) Cut into pieces and serve with green coriander chutney or tomato sauce.
5) Take care to place the thali over a vessel to prevent water in the pressure cooker from getting into the mixture.

Idli is a steamed ffod that can be consumed by people of all ages starting form babies of aged 2. It is made of rice and other grains that are crushed well and made into a paste. Special vessels are available in the market into which these pastes are poured and then steamed. anything spicy or sweet can be kept as side dish for idli.

take 3 measures of plain rice, one measure of boiled rice and after washing and draining the water thoroughly Fry this to a light brown [ 2 handfuls at a time ] and grind this to a coarse powder. [ uniformly-pl.] it must be like semolina, then take a cup of powder , add some water , just enough to soak it well and steam cook it. add dessicated coconut , 1 cardomom [powdered , ] and sugar to taste. you can try this with wheat also-- fried wheat powder. you must be careful about the water and cooking . if it gets over cooked it will be a lump and you wont fancy it
