My wife is a vegetarian her entire life. She's 37 and looks 25. She is the healthiest person I have ever known. She drinks water almost constantly and swears that's her secret to health. No meat, no fish, no salt, no eggs.

You should drink at least 8 glasses of water per day for health. About 70% of our body is actually water! {:-)
I probably drink about 1L of water a day, combined with other liquids (soy milk and 100% juice mostly). Very rarely do I drink soft drinks or sugar-added beverages.
Needing 6-8 glasses of water a day is actually a myth! You just need about that much in fluids - it doesn't have to be water. Water is just a more ideal liquid, as it does not contain calories. Other beverages should be chosen wisely, based on their nutrient content (such as pure juices and soy milk) and taken in moderation.
Different people have different fluid needs. Vegetarians tend to get more fiber in there diet and therefore will need more fluids. This is not a bad thing - most people do no get enough fiber every day! Other people exercise a lot and sweat, increasing their fluid needs. Some people have medical problems that increase or decrease their fluid needs as well.
